3 Ingredient Paleo Strawberry Cream Popsicles (Low Carb)

Super Creamy But Dairy Free Strawberry Cream Popsicles are made with just 3 ingredients! 

Simple recipes in the summer are what makes my world go ’round! I love to make popsicles for the kids and myself ready in the freezer when we just want a little something to cool us off and enjoy! It’s always nice to offer to the friends that come over unexpectedly as well! I’ve got some adult only popsicles too, unless you kids like the coffee flavor, these are a hit with all my friends, Caramel Macchiato Popsicles! 

I’ve got 3 kids and some are more picky than others. When I make anything with fresh raspberries and blackberries, the seeds  bother them. But they love strawberries no matter what. They especially love Strawberry Lemonade Sorbet as well Strawberry Cheesecake Swirl Ice Cream! 

Currently I’m on a dairy free diet since I’ve been struggling for over a year, maybe more to lose about 15 pounds I’ve had on since I wrote my Cookbook! I’ve been low carb for 2 or 3 years, sugar-free for 13 yrs and gluten free for 5. But I’m an overeater for sure, and even being healthier food and choices, I tend to just eat too much. I had to go back to basics, no desserts even sugar free and low carb for at least a month. I’m currently just 2 weeks in right now. So coconut milk is the choice for these pops!

Ingredients

  • 1 can 13.5oz (400ml) coconut milk
  • 1 cup 150g fresh strawberries
  • 1 tsp vanilla liquid steviaor 1/2 cup of sweetener of choice

Instructions

  • Place all ingredients in the blender and blend until smooth.
  • Taste and adjust sweetener as needed.
  • Pour into molds and freeze 4-6 hours or overnight.

    1. Yes but it doesn’t have much fat content as coconut milk does which means they will not be as creamy instead more icy.

  1. I made these today, with full-fat canned coconut milk and strawberries, from our garden. I don’t have popcicle molds, so I poured it into a shallow-glass rectangular dish. Then I will cut small squares and use a toothpick, to eat. Thank you for posting this recipe. I didn’t know what to do with all the strawberries, that my husband had picked.

  2. Is your coconut milk light or regular??? mine is Goya brand 13.50 oz, regular and has 100 calories, 9g of total fat, 2g carb per 1/4 cup, so, from the milk my popsicles could have much more calories, about 70g; fat, about 6.3g per popsicle. Thank you for your help.
