These Easy 3 Ingredient Sugar-Free Low Carb Peanut Butter Popsicles are creamy but surprisingly dairy free!
I'm serious, 3 ingredients.
No really, just 3. When you're a lover of peanut butter it doesn't get much better than this recipe!
Creamy, sugar free, peanut buttery and low carb too! Oh wait, Dairy Free as well!!
AND not only that, if you need this to be nut free, there's an option for that as well! Very adaptable recipe if I do say so myself and very allergy friendly!
I've been on a peanut butter kick lately, hope you don't mind.

I have to admit when I shared my Peanut Butter Cheesecake Ice Cream recipe recently and saved some in the freezer, it was seriously hard to scoop out just a serving. That stuff is so good, I ate way more than the serving!
So I thought about making Popsicles instead for easier portion control. These are NOT the same as the cheesecake ice cream since they are dairy free, but if you have a problem with portion control with delicious sugar free desserts these will work much better for you.
If you do have any nut allergies, try subbing the peanut butter with sunbutter which is made from sunflower seeds. Might be slightly different in taste but not in texture, still creamy and delicious!
Simple the best treat for a hot day or any day for that matter!
This recipe was originally published in June of 2015. It's such a great recipe I decided a video was in order so I brought out of the archives to share today!
Brenda's Notes:
- I have not tried this with unsweetened almond milk, although I don't think they would be as creamy as using coconut milk. I can promise you no coconut flavor is present, the Peanut Butter is the star!
- If you don't have liquid toffee flavored stevia which in my opinion pairs perfectly with this, use vanilla or clear. If you don't use stevia at all you could make this with another sugar free sweetener of choice. Although granulated sweeteners might make this grainy in texture and not as smooth.
- If you make this using all the liquid from the canned coconut milk, it will be less thick and more watered down, but easy to pour into molds.. I used just the creamy thick part from the can and kept the watery coconut liquid from the bottom for a smoothie, BUT you will need to spoon it into the molds as it's quite thick. Both are equally delicious!
- If you need to make this nut free, sub sunflower seed butter for the peanut butter.
- Here's the mold I used.
3 Ingredient Sugar Free Peanut Butter Popsicles
Ingredients
- 2 cans 13.5 oz each coconut milk
- ½ cup no sugar added peanut butter
- 1 teaspoon toffee liquid stevia
Instructions
- Place ingredients into a high powdered blender and blend until smooth.
- Taste and adjust sweetener if needed.
- Pour mixture into molds and freeze until hardened, about 3 -4 hours.

I had a terrible time trying to get these out of the mold. Ran under warm water for awhile, then when they started to come out, some of it was left on the walls of the mold. ? This was after 3 hours. Do you spray anything on the walls of the mold to avoid this?

Mine didn't need long, I did run under hot water for a minute and let sit out about 15 minutes and they came right out.

I made them again and let them sit over night rather than just 3-4 hours and they came right out after running under hot water. Not sure what the difference was, maybe just more solid.
Also - I melted down a half cup of Lily's choc chips with a couple of spoonfuls of the peanut butter, and then mixed it with the rest of the peanut butter, coconut milk, and vanilla creme stevia. They were so good! Thanks for this recipe!

I used Jiffy natural creamy, but it spreads like regular pb. Then I used the creamy part of the coconut milk and a little of the liquid may have snuck in with it. What's the best way to separate the two and secure not to get any liquid?

Brenda, wish you had pictures of the process in which you made the pops. I mixed the cream, pb and sweetener in the blender on high speed till blender and within seconds it started to separate. Not sure what I did wrong... Please advise!

Can't you tell me what brand of peanut butter you used? Did you make sure to not use the liquidy coconut water at the bottom, just the cream part? I just used the blender for a quick minute to incorporate. I'm sorry that happened.

Love the idea of keeping sugar at bay. I have been making other flavors using avocado (Yes avocado!) and the pops turned out delish! Also chocolate and avocado and as I write this, fresh peach ice cream pops are freezing. Looking forward to trying this recipe but am having a hard time finding Stevia drops in different flavors. I have the clear but would love a variety. Any suggestions?

I'd say use maybe a mixture of half unsweet almond milk and half heavy cream to provide that fat that almond milk really doesn't have.

Hi Brenda, I was wondering how many more carbs per serving would be added if I use my Peter Pan peanut butter instead. It usually measures 3 carbs for 2 tbls. Is the sugar free what you can buy in the deli made fresh? Thanx for yet another yummy treat. ☺

You would need to input the ingredients into something like my fitness pal for the nutrition info for that change. I buy unsweetened peanut butter at Whole Foods, there are many options.

I feel a little silly for asking this but I'm going to anyway...what do you mean by "cream parts only" of the coconut milk? Are you saying to just use the semi-solid stuff that's always at the top of the can and throw the more thin liquidy parts in the freezer?

Yes the solid creamy part only and use the thin liquid at the bottom for something else.
