Have any left over cooked chicken breast on hand? Use it up for this delicious recipe! Throw in some delicious roasted red peppers, cooked quinoa and a few other ingredients and you've got yourself a healthy balance of protein and carbs all in one piece of baked goodness.
Super simple recipe to make. Just cook the quinoa, mix the other ingredients together, combine and bake, that's all there is to it. EASY and Healthy!
You could also just leave out the chicken and make this an all veggies meal. But I suggest cook the veggies a bit until they tender before adding to the quinoa and baking. 🙂

Hi Brenda,
This recipe looks amazing, and it's about time that quinoa got it's time in the spotlight at the dinner table. 🙂 Can you tell me if you've tried to freeze this recipe? Thank you for all of the great recipes!

Brenda, I am loving this recipe.
First off it is the perfect use for that little bit of extra chicken that is lying around. It is also a great reason to cook just a little bit of extra chicken just to make this.
I am a big fan of recipes that are quick and easy. This one definitely is that!
I also like the fact that it is all in one pan. Easy to make and even easier to clean.
This is a healthy option for a quick meal.
Keep sharing because I would love to see more recipes like this!

this looks amazing! seems like a super summery dish 😀 any way to make it dairy free?
Brenda
I don't have a substitute yet in mind for the cream cheese besides a dairy free yogurt.
Rachel
Hey Brenda, do you think it might be possible to make this dairy free? Let me know your thoughts. Blessings, Rachel 🙂
Brenda
Maybe sub the cream cheese for a dairy free yogurt. You need to replace it with something else creamy for the quinoa to hold.
