If you're following a low carb diet or keto diet, increasing your protein intake and reducing your sugar intake is the key for the best results in weight loss.
Protein is super satiating and adding it to make a creamy ice cream is a great way to have a guilt-free dessert you can enjoy often.
Most Ninja Creami recipes I've seen on tiktok- make regular ice cream using maple syrup or if you see a high protein keto ice cream recipe often you will also see it include instant pudding mix which contains artificial ingredients and artificial sweeteners.
I prefer not to use instant pudding mix or jello because the artificial sweeteners cause me to have cravings so I avoid them.
My keto protein ice cream has just 6 simple ingredients you probably already have in your pantry.
You simply blend the ingredients with a blender, food processor or immersion blender then add to your Ninja Creami pint container and freeze. All the ingredients in this healthy ice cream recipe can be found in your local grocery stores.
Carbs in Regular Vanilla Ice Cream
According to Cronometer app, 1 cup of regular vanilla ice cream by Haagen-Dazs has 478 calories, 42.8 g carbs, 31.1 g fat, 0 g fiber and just 6.7 g protein.

Our delicious ice cream can be made in the Ninja Creami ice cream machine or in a regular ice cream machine.
Can I swap the vanilla collagen with vanilla protein powder?
I made 3 tests with this ice cream base and one use vanilla whey instead of collagen. In my opinion, the creamy texture was lost and it was more grainy and I did not enjoy it.
Another test was adding cream cheese to the ice cream base and while it was creamy, it added more fat than I wanted and it took more time to blend the cream cheese by melting it or letting it come to room temperature, so I opted to remove it and I increased my cottage cheese instead.
Cream cheese also acts like a thickening agent, but instead I added a small amount of heavy cream in my final test.
This is the version I'm sharing today for a healthy Ninja Creami recipe that is a delicious treat without added sugar!
Can I add xanthan gum to thicken?
I don't think you need to add any xanthan gum to this homemade ice cream recipe if you are using either a Ninja Creami ice cream maker or a traditional ice cream machine since they both churn the ice cream and thicken very well.
Can I replace the vanilla stevia?
If you aren't a fan of any of the sugar substitutes I use in my sugar free recipes, you can always feel free to swap with any other low carb keto sweeteners you prefer.

Fine-tuning sweetness level of ice cream is really a personal choice but the best things about a healthy ice cream recipe that doesn't include eggs is that you can taste and adjust the sweetener before freezing the ice cream to decide what is best for you or if you need to add more to satisfy your taste buds.
I do not recommend using granular low carb sweeteners as that will cause the texture to not be as smooth.
This Monk Fruit Allulose blend is powdered and will work just fine in this recipe if you don't want to use vanilla stevia.
Do I need to scrape the surface of the frozen ice cream?
In the Ninja Creami community online, I've read that most people feel if you scrap the ice cream with a butter knife to level surface that it will blend better when you press the ice cream or lite ice cream button.
I've tried it both ways and don't really notice any difference in the texture after it has spun.
Can I skip the collagen?
You could leave out the collagen, but that will reduce the amount of protein in the ice cream recipe but it won't effect the taste or texture.

Sugar Free Keto Ninja Creami Protein Ice Cream
Ingredients
- 1 cup cottage cheese
- ½ cup unsweetened almond milk or replace with coconut milk
- ¼ cup heavy cream
- 1 scoop vanilla collagen 15 grams
- 2 teaspoon vanilla extract
- 1 teaspoon vanilla liquid stevia or to taste or see note above for swapping
- 1 tablespoon unsweetened almond milk for Respin
- 2 tablespoon sugar free chocolate chips optional
Instructions
Vanilla Protein Ice Cream
- Add all the ingredients to a blender, (except the ingredients for re-spinning, the 1 tablespoon of unsweetened almond milk.) Blend until smooth. Taste and adjust sugar substitute sweetener if needed.
- Pour into Ninja Creami container and freeze for 18- 20 hours or until frozen. Freeze for just 8-10 hours for soft serve.
- Place frozen pint container into the base or the outer bowl of the Ninja Creami machine, cover and press Lite Ice Cream button. Remove and add the 1 tablespoon of almond milk. Press Re-spin button. Remove the entire pint of ice cream and enjoy, half or the whole serving.
- If using sugar free chocolate chips, make a hole in center of ice cream and drop in chips. Cover and press Mix-in. Enjoy!
- Store any left over ice cream in a glass container with the storage lid on and freeze for up to 3 months.
Chocolate Protein Ice Cream
- Swap vanilla collagen with chocolate collagen and add 2 tablespoons unsweetened cocoa powder.Replace vanilla liquid stevia with chocolate liquid monk fruit sweetener.
