Crock Pot Beef Stew- simple, easy, perfect every time.
Beef stew is a classic comfort and timeless recipe that really never gets old. It's so basic that it wasn't a recipe I ever intended to bring to you on my blog. But sometimes simple recipes are the best kind and making this in the crock pot takes all the stress from a busy day knowing it's waiting for you at home.
While I've made this recipe a million times, really my mom's recipe, we've always used the pressure cooker. My grandmother and mother taught me how to use it which never made me afraid of using one. I have a couple of recipes here on the blog using my pressure cooker and even a video on how to use it on youtube. Unfortunately it's not a household kitchen appliance many will buy and most feel safer just avoiding it altogether. Hence this recipe, made many times in my pressure cooker, now made for the crock pot instead.
The biggest issue I've always had with crock pot recipes is food that does not come out tender or moist. My perfectionism is evident in my recipes as I will not bring you anything that doesn't come out moist, tender and fantastic. If you've had one or two crock pot flops like me then you know trusting again can be hard, but it's all about the recipe and timing. YOU CAN TRUST YOUR CROCK POT AGAIN after this recipe I promise you that!
When I was recently enjoying this as left overs in the teachers lounge of our homeschool co op, everyone was asking what the insanely delicious smell was. No one had heated anything else up in the microwave as I had so it had to be my beef stew. I asked on FaceBook if you all really wanted the recipe because I just thought everyone, everywhere knows how to make beef stew. But you all did, so here it is!
Even my children ate their vegetables in this recipe, and that says it all, don't you think?
Crock Pot Beef Stew
Ingredients
- 2 pounds beef chuck chunks
- 2 tablespoons oil
- 1 teaspoon garlic
- 2 teaspoons salt
- ½ teaspoon pepper
- 3 cups beef broth
- 2 cups diced carrots
- 1 cup chopped onion
- 4 cups chopped potatoes
- ¼ teaspoon dried oregano
- ¼ teaspoon allspice
- ¼ teaspoon dried basil
- ½ cup frozen peas
- 1 tablespoon fresh chopped parsley
Instructions
- Heat oil and garlic in a large saute pan add meat once garlic is fragrant.
- Brown meat and season with salt and pepper.
- Add meat and all other ingredients except the peas to the crock pot.
- Cook on high for 7 ½ hours then add peas and cook another 30 minutes.
- Top with fresh parsley to serve.

I was happy to see this recipe today. And then I saw the link for the pressure cooker and I was even more excited! I have some stew meat set out and I was just wishing for a pressure cooker recipe. I heart my pressure cooker! I will use the crockpot one too but today I need quick ;). Thank you!
