Traditional pancakes made with all purpose flour or wheat flour is high in carbs and definitely not something you want to eat if your following a keto diet. It will definitely spike your blood sugar and kick you out of ketosis with 13.4 grams of carbs for just 1- 4 inch sized pancake.

โ€‹I’ve got quite a few keto pancake recipes that all have their own unique pros and cons. A cream cheese keto pancake recipe was really popular back in the day when I started keto in 2015.

But I didn’t care for them, so I created my ricotta vanilla pancakes which are easy to make as you just blend them up and fry them. The con is that they have dairy and for many this is something that won’t work for you. 

I also have a high protein pancakes recipe using cottage cheese that again is fabulous, but made with dairy. Both are a delightful low carb breakfast and suitable for anyone on a keto diet or low carb diet.

โ€‹I’ve also got my very popular 3 ingredient protein pancakes which are actually my protein waffles recipe using unflavored protein powder, eggs and cottage cheese. Widely popular for a high-protein breakfast but again using dairy with the cottage cheese and whey.

Keto Protein Pancakes

โ€‹Our new carnivore fluffy pancakes are made without dairy, without using any keto flours like almond flour or coconut flour and without any whey protein powder which i know many don’t like or want to use. 

โ€‹Our easy protein pancakes have 46 grams of protein per serving which is 6 low carb pancakes on recipe card below!

It’s literally just 3 eggs for 6 fluffy protein pancakes but if feels so hearty and filling! Just 1 total carb per 6 pancakes.

The best part about these amazing carnivore pancake batter is that you can fry in a frying pan or bake them in the oven for less work.

My hubby and youngest son who are doing the carnivore diet for the month of March, loved them both ways. The benefit of the baking is that you don’t need to stand at a stove to flip and you use a lot less fat to cook them. 

โ€‹In my opinion, I loved both in texture but prefer the fried ones since I think they have a little more flavor because of the oil I used to fry them in the hot pan.

Can I skip whipping the egg whites?

If you decide not to whip the egg whites and blend it all together in a food processor or stand mixer, you will have flat low-carb pancakes.

Flavor Options and  Healthy Toppings

If you’re not following the carnivore diet and want some sweetness or flavor options try vanilla extract with liquid vanilla stevia.

If you like lemon, you could use some lemon zest and lemon liquid stevia.

Dairy-Free Low Carb Keto Carnivore Protein Pancakes

Ingredients

  • 6 large eggs separated
  • 6 tsp gelatin
  • 6 tbsp collagen
  • pinch salt
  • 2 tbsp bacon grease, lard, coconut oil or olive oil to fry pancakes
  • see content above for flavor options, and toppings for those not following a carnivore diet.

Instructions

Stove Top Instructions

  • Place the egg whites into a stand mixer or large bowl and use an electric hand mixer. Using the whisk attachment in the mixer, start on low speed and sprinkle 1 teaspoon of gelatin at a time into the whites. Increase speed to whip egg whites to stiff peaks. Set aside.
  • Place the egg yolks into a large bowl and sprinkle in collagen. Stir together until smooth. Fold the yolk mixture into the whipped egg whites. Sprinkle in salt.
  • Add your favorite fat or oil to a large skillet and heat on medium heat.ย 
  • Using a 1/3 measuring cup, scoop batter into a hot skillet. Make 6 mounds and lower to medium/low heat. Flatten tops, then cover and cook for 3-4 minutes. Uncover, if bottoms are golden brown, flip over to the second side and cover again. Continue to cook another 3-5 minutes.

Baking Instructions

  • Preheat oven to 350 degrees F. Grease two- 6 capacity- silicone hamburger bun pan. Place the silicone pans onto a large baking sheet pan.
  • Using a large ice cream scoop, measuring about 3 ounces or 1/3 cup, drop batter into each. Level tops with a butter knife. Bake for 10-12 minutes until lightly golden brown. Gently lift the bottoms to check if nicely browned. Flip silicone pan over to remove.

Storage

  • Storage: If meal prepping, cook and cool pancakes then place each pancake in a single layer between pieces of parchment paper for easier removal.
    Freeze for up to 3 months or refrigerate leftover pancakes in an airtight container for up to 5 days.ย
