Keto Cinnamon Raisin English Muffin
It's not quite the fall season just yet, but this time of year makes me want cozy sweaters and warm spices!
When my new recipe for keto cottage cheese cinnamon swirl bread went viral pretty fast, I knew I needed to adapt the loaf for a single serving keto bread recipe. I knew I wanted the texture of traditional English muffins but with that irresistible taste of cinnamon and raisin.
Unlike my original 90 second cottage cheese bread recipe, this one includes warm cinnamon spices with a little bit of low carb brown sugar substitute to really amp up those fall flavors.
If your on tik tok, you've seen the 2-ingredient cottage cheese bread, you will see it uses just whipped egg whites and cottage cheese though some other cottage cheese bread recipes actually use bread flour or all purpose flour and are not keto friendly or gluten free.
It is absolutely tasteless with water, cottage cheese and liquid egg whites, don't even try it.
Always check the ingredients on tiktok- make the ones that don't include regular refined flours and sugar because there are a ton of content creators who care nothing about using quality ingredients for a keto diet and are just looking for a quick viral video for themselves.
Now before all you keto police complain that raisins are not keto friendly, let's discuss!
Are Raisins Keto Friendly?
Technically no food is keto or not keto, ketosis is a nutritional state your body goes into to switch from burning glucose for fuel to burning ketones for fuel.
Since everyone is different, getting into ketosis will be different for each person as to how much or how little carbs you need to get into ketosis.
Most people can get into ketosis with consuming no more than 50 total carbs per day. Some people may need to only consume 20-30 total carbs per day.
Certain foods will be easier to fit into a keto lifestyle than others if you're only allowing your daily carb intake to not exceed 20 grams.
Raisins are higher in carbs than fresh fruit because they are dried, but you only need just a few to get that great taste of a traditional Thomas cinnamon raisin English muffin.
According to the app I use, Cronometer, a miniature box that is a total of a half an ounce with 14 grams total that has 11 g carbs which is quite high and almost half your carbs for the day if you're just eating 20 carbs per day.
This 90 second microwave English muffin has 6 little raisins per muffin which is just 2 grams weighed.
The total carbs per muffin is 7 g. If that amount is too high for your own macros, you can remove the raisins.
These are the best English muffins and even if you decide to remove the raisins for peace of mind, they have such a great texture you certainly won't feel disappointed in the end result once you try them.
Carbs in Regular English Muffin
According to the app Cronometer, one of Thomas's Pumpkin Spice English muffins has 29 grams of carbs, and just 5 grams of protein.
Carbs in our Keto English Muffins
Even with including 6 raisins per keto english muffin, that only totals 4 grams between 2 keto english muffins.
One english muffin has a total of 7 grams of carbs with 9 grams of protein and dietary fiber 2 grams so 5 net grams of carbs per muffin.
You could eliminate the raisins if you prefer and that will bring your total carbs per keto muffin down to 5 grams.

Can I use a Different Sugar Free Sweetener?
I recommend using a brown sugar substitute and my choice was a combination of Monk Fruit sweetener and Allulose.
But if you don't want to purchase another low carb sweetener, any low carb granulated sweetener will work in this easy recipe. Here's my Sweetener Guide & Conversion chart.
Can I bake this instead of microwave?
Absolutely!
If you don't want to use the microwave, you can place the ramekins in a toaster oven or regular oven at 350 degrees F for 8-10 minutes or the air fryer at 375 degrees F for about 5-8 minutes.
Just check the center with a toothpick and if it comes out dry not wet, it's done. Cool slightly in order to slice and toast for about 3-5 minutes.
Can I make this Nut Free?
Yes if you can't use almond flour due to a tree nuts allergy, you can swap it with sunflower seed meal.
I do not recommend using coconut flour for this microwave bread as it will be strong in flavor and may be a bit too sweet as well.
Replace the powdered peanut butter with sunflower seed butter, no sugar added.
Can I swap the cottage cheese?
If you don't want to use cottage cheese you could swap with ricotta cheese, but I haven't tested it with anything else.
You could try this 1 minute Pumpkin English muffin recipe instead.
How to Store
After cooking and allowing the bread to cool, you can store in an airtight container in the fridge until you are ready to slice and toast it. Keeps well for up to 3 days in the fridge or freezer for up to 3 months.

Easy 90 second Keto Cinnamon Raisin English Muffin
Ingredients
- 2 tablespoon cottage cheese
- 2 tablespoon almond flour or swap with sunflower seed meal for nut free
- 2 tablespoon no sugar added powdered peanut butter or swap with sunbutter for nut free
- 1 large egg
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- 1 tablespoon Monk Fruit Allulose Brown sweetener
- ½ teaspoon cinnamon liquid stevia optional
- 4 grams raisins ( 6 raisins per muffin)
Instructions
Microwave Directions
- Grease two ramekins or microwave-safe bowls with olive oil, avocado oil or coconut oil cooking spray. Set aside.
- Place the ingredients together, except the raisins, in a small bowl and stir together until combined. Divide the batter evenly between the two ramekins then add 6 raisins to each ramekin.
- Place one dish into the microwave and cook for 1 minute. Check with a toothpick in center. If it comes out clean it's done, if not, cook another 30 seconds. Repeat with second dish.
- Allow to cool enough to slice in half and toast.
- Enjoy with a tablespoon of butter or strawberry chia jam and cream cheese.
- Store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
Oven Directions
- Bake in a preheated 350 degrees F oven for 8-10 minutes.
