This Keto Cottage Cheese Fluff is a no bake keto dessert that takes minutes to make and tastes like a Pina Colada cocktail!
Cottage cheese is getting all the rave on social media. Every recipe creator is using cottage cheese nowadays, but I'm happy to say I've been using it in recipes since 2012 when I added it into a chocolate smoothie as well as into a spinach pie.
All my recipes with cottage cheese are keto friendly. Always check the ingredients on tiktok- make the ones that don't include regular refined flours and sugar because there are a ton of content creators who care nothing about using quality ingredients for a keto diet.
Best Cottage Cheese Brands
You can find many options for cottage cheese at local grocery stores, but specific brands vary in taste and texture.
I don't recommend fat free cottage cheese because it won't be as satisfying as full fat cottage cheese or as creamy. I like to use lactose free cottage cheese since my daughter and I both have lactose intolerance.
The brand I like best is Green Valley organic, but the Lactaid brand is also a great brand as is, the Good Culture brand.
Carbs in Traditional Dessert Fluff
Easy recipes like this are what makes a keto diet sustainable in my opinion. Even if you're on a low carb diet, the amount of sugar and carbs in a traditional coconut pineapple fluff salad is high.
According to the app Cronometer, the only thing comparable to my keto dessert fluff is a mixed fruit salad with whipped cream topping and mini marshmallows.
Obviously the whipped topping isn't the same since I don't use cool whip. For a ½ cup serving has 17 grams of carbs.
Carbs in Cottage Cheese Fluff
Our cottage cheese fluff keto Pina colada recipe has 4 total grams of carbs. with 1 gram dietary fiber so if you follow net carbs on keto recipes, this has 3 g net carbs.

Can I swap the Cottage Cheese?
You could swap the cottage cheese if you're really not a fan of cottage cheese, but I promise you can't tell it is in this recipe.
All the extracts I used and using the food processor to blend the cottage cheese, creates a very creamy texture so the curds of the cottage cheese won't be noticed.
I can recommend ricotta cheese in it's place, because it can still provide the same amount of grams of protein but it will add more fat and carbs to the recipe.
You could also possibly use plain Greek yogurt which would still provide a creamy consistency.
I think you could also swap the cottage cheese with cream cheese but because it's so thick in texture you may not even need the gelatin. You would also want to have the cream cheese be room temperature so it incorporates well.
What else can I use besides pineapple extract?
If you don't want to purchase pineapple extract, you could use the pineapple juice from canned pineapple if you have it on hand. If you live in a place that has access to fresh pineapple that is an option as well.
But please note, adding fresh or canned pineapple juice will increase your carbs in the nutritional information below. I feel if you like a strong pineapple flavor that using the extract is best.
Can I use coconut extract if I don't have coconut stevia?
If you don't want to buy coconut stevia, you can use a teaspoon of coconut extract to add to the coconut cream used in this simple recipe.
What other low carb sweeteners can I use?
You can use whatever low-carb sweetener you prefer but I do love the flavored coconut stevia which really enhances the tropical feeling and flavor combination I used to mimic being on a tropical island.
Vanilla stevia would also be good to use if you have it on hand, but if not use my Sweetener Guide and Conversion chart to help you determine how much to use.

Low Carb Keto Pina Colada Cottage Cheese Fluff
Ingredients
- 1 cup cottage cheese 4%
- ½ cup canned coconut milk
- ¼ cup coconut water (taken from the canned coconut milk)
- 2 teaspoon gelatin
- ½ cup heavy cream
- 1 teaspoon coconut stevia or vanilla stevia or your favorite low carb sweetener to taste
- 1 teaspoon rum extract
- 1 teaspoon pineapple extract optional
Optional Topping
- ¼ cup unsweetened shredded coconut toasted

Instructions
- Place the cottage cheese and canned coconut milk in a food processor to remove clumps. Set aside.
- Pour coconut water into a small saucepan and heat over low heat on the stove or place in a microwavable bowl and heat 1-2 minutes until boiling. Slowly whisk in gelatin a little at a time while continuing to whisk until it is completely dissolved and there are no lumps. Set aside to cool.
- Add the heavy cream to the food processor and blend together until incorporated. Add in sweetener and flavor extracts and blend again. Taste and decide if it's sweet enough. Pour in the cooled gelatin and process once more.
- Spoon a ½ cup of the fluff into dessert cups or use a piping bag if desired.
- Top with optional toasted unsweetened shredded coconut.
- Storage: Airtight container or covered in the fridge for up to 3 days.
