We are back from our vacation camping in New Hampshire and although fun, a whole lotta work coming home and unpacking! BUT memories for the kids will last forever and they truly had a blast!
I just hope the never ending pile of laundry will cease at some point. 🙂
This coming week is also going to be challenging as I am volunteering from 8:30-4pm every day at Cubscout Day Camp with my kids. Dinners will be crock pot meals, grilling or stove top, no oven required. I didn't get to the grilled pizza or the grilled fish as it rained every day of our vacation believe it or not. So I'd like to try those recipes this week.
Breakfasts
- Baked Fruity Quinoa [prepared the night before]
- Chocolate Chip Cream Cheese Banana Bread with yogurt-2x [prepared the night before]
- Overnight Crock Pot Oatmeal with fruit
- Cereal with strawberries
- Omelet's with cheese and spinach
- Individual Whole Wheat Puff Pancakes with Personal Toppings
Dinners
- Crock Pot Beef Burgundy {prepared the night before}, brown rice
- Grilled Salmon, zucchini, squash, eggplant, corn on the cob, left over brown rice
- Easy Hawaiian Kalua Pork from Cheeky Kitchen, Italian Potato Salad, Sauteed Spinach
- Grilled Veggie Pizza, salad, grilled chicken drumsticks
- Asian Turkey Lettuce Cups/ Tacos for kiddies, steamed broccoli
- Crock Pot Pork & Pears, green beans, mashed potatoes
- Over at Parents for dinner
