Best Keto Pizza Recipe -Nut Free Fathead Dough
Pizza is one of the most guilty pleasures we indulge in when trying to watch our weight, lose weight or even just eat healthier.
It tastes so bad for you and well.....usually it is. Loaded with hefty toppings galore, one piece is never enough. It's never enough because traditional pizza is not made with healthful flours that would keep you full and satiated.
Do you know anyone that can eat one piece of pizza? Neither do I.
But Fathead dough, keto pizza dough, has changed the world for all us on a ketogenic diet and low carb-ers!
What is Fathead Pizza Dough?
I'm not the first one to create this type of pizza but the original recipe, called Fat Head Pizza. The orginial fathead pizza dough was made using almond flour, cream cheese and mozzarella cheese, and it was genius!
But when you have a child with a nut allergy, making anything with almond flour is an issue so I use coconut flour and I think it works fabulously!
The first time I tried the original recipe with my adaptions to the nut flour, the pizza was too small for a family of 5.
I'm certainly not going to make a keto pizza dough all for myself, so I reinvented and worked on their recipe to make it work for us in our family. This way it is plenty big enough for everyone to have at least 2 pieces if they wished.
I'm just thrilled I can make a pizza for pizza night that my entire picky family will eat and it's low carb and keto and absolutely delicious!
Simple Ingredients Needed
This keto pizza recipe makes two-12 inch round pizzas or one large 12 by 16 rectangular pizza. Divide all ingredients in half if you prefer to make one, 12-inch round pizza.

How to Make Keto Fathead Pizza Crust
Preheat oven to 425 degrees F.
NEW EASY METHOD: Place all ingredients into a food processor and process until combined.
Remove and place into a microwave-safe bowl and microwave for 2 minutes or double boiler to melt mixture over low heat on the stove.
Stir again to combine.
Wet your hands and spread mixture onto a parchment lined baking sheet or use a rolling pin between two pieces of parchment. I did try to make this without parchment paper. I greased the pizza pan and maybe it was my baking sheet pan, but it did stick, which I hate.
So a piece of parchment paper works. May not be as crispy on the bottom as you might like, but it is what it is and it works for us. You could also try a pizza stone to get it a crispy crust.
For a thin crust, measure out a 12 x 16 rectangle or this recipe makes two 12 inch round pizzas.
Spread as evenly as you can all the way to the edges of the pan, continue to wet your hands with water if necessary to prevent sticking.
Using a fork make holes into the crust.
Bake for 12 minutes or until slightly browned.
Add your toppings and bake 5 more minutes to melt cheese.
Low Carb Pizza Crust versus Regular Pizza
Regular pizza contains wheat, gluten and is definitely not low carb or keto friendly, but there are many options for a low carb pizza crust and one of my favorites is the cauliflower pizza crust.
One of my most popular keto pizza on my website is this cauliflower pizza crust. I personally love it, but my family could taste the difference in the crust as opposed to using this fathead dough pizza crust.
While I love my cauliflower pizza recipe, this fat head pizza dough resembles more of the texture that my kids enjoy.
With this fathead pizza they could eat it weekly and not tire of it or complain.
Why? Because it clearly resembles a real flour dough pizza! Unlike cauliflower crust pizza which is hard to hold and easier to just eat with a fork, this pizza can be held like a traditional piece of pizza.
Keto-Friendly Toppings
You could make my quick homemade marinara sauce or purchase Rao's marinara which is low carb.
Our favorite toppings are simply mozzarella cheese and pepperoni, but sautéed onions, peppers and mushrooms would also be keto friendly and delicious.
How to Store Keto Pizza Recipe
Store any leftover pizza in an airtight container in the refrigerator for up to 3 days.
How to Reheat Leftover Pizza
Reheat slices of keto pizza in an air fryer at 400 degrees F for 2-3 minutes or bake in a conventional oven at 375 degrees F for 10 minutes.
Is Coconut a Nut?
I'd like to clear up this constant question get asked almost daily about whether coconut is a nut. While the US Food & drug Administration (FDA) claims that coconut is a tree nut becomes it comes from a tree, it is in fact a FRUIT. People who have tree nut allergies may be allergic to coconut as well, but being allergic to coconut is not the same as having a tree nut allergy.
My own son was diagnosed with a Peanut and Tree Nut allergy at the age of 2. He has safely eaten coconut all these years without issue and he is now 14. Coconut is a fruit, called a drupe. It's like a peach with a pit.
The American College of Allergy, Asthma and Immunology says it well: "Coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. If you are allergic to tree nuts, talk to your allergist before adding coconut to your diet."
Frequently Asked Questions
Can I add yeast to the keto pizza dough?
Yes you can add yeast to the dough but please understand that it will only provide flavor, it will not make the dough rise and we are not activating the yeast with sugar.
Can I swap the eggs out?
Yes, if you need to remove the eggs due to an allergy, you can replace them with 4 ounces more of cream cheese.
Can I freeze keto pizza dough?
Yes you can freeze this keto pizza dough. I would actually bake the dough as a round 12 inch pizza, allow to cool, do not add any toppings. Cover with parchment and wrap with foil. Freeze the cooked pizza shell for up to 2 months.
Can I make this with almond flour?
Yes, if you have a coconut allergy you can replace the coconut flour used in this keto pizza dough recipe with 2 cups of almond flour. If the fathead dough is sticky, add ¼ cup more almond flour.

My youngest has a tree nut allergy and the doctor told us that coconut is not in the tree nut family. It is actually a fruit. Some people are allergic to coconut as well, but technically speaking it is not a tree nut and my youngest can have it without issues.

I love all your recipes ty for them as a diabetic type 2 i use these recipes alot i do however sub in qinoa and almond flour if the recipe calls for coconut flour which is high in sugar 16g per 100g serving. So if it calls for a cup i use 1/2 c almond 1/2c quinoa. Carbs do play a big part in a diabetics life as does the sugar...carbs turn into sugar. I found it so hard to stay on track because there didnt seem to be alot of food choices. You opened up my world of food again. Ty for that..your cloud bread goes to work with me most days, i love that i can have a sandwich again guilt free, and know i am not hurting my sugar levels.

Hmmm, I am not sure where you are getting that coconut flour information. My package for Bob's Red Mill has 1 gram of sugar per 2 tablespoons. Even if it calls for 4 ounces or 8 tablespoons that is just 4 grams of sugar. Maybe you are thinking of sweetened shredded coconut instead of coconut flour? I can't tell how thick you rolled the crust. I was hoping to make mini sized pizzas for my toddler but didn't know how thick the dough should be when rolled out? Also, can the crust be cooked and then frozen for later?

Have you tried this with any other varieties of cheese? I'm thinking cheddar. I am somewhat sensitive to dairy and for some reason my body seems to tolerate cheddar better than mozzarella. I know this would alter the flavor some, but I'm more concerned with the texture....

Oh, meant to add that I've had good luck with garbanzo bean flour if you are looking to replace the coconut flour. I've tried potato flour as well, but it is very sticky and difficult to work with - the bean flour gives a nice flavor and added fiber, too. Paula

Lovely blog - so generous, creative, and delicious, too! 🙂 My son also has a tree nut allergy. I wanted to point out that coconut (you use coconut flour in this recipe) *is* a tree nut. Perhaps your son is not sensitive to this? I'm not sure how sensitive he is, but we avoid anything that was processed on equipment that processed tree nuts. My nutritional information is for the recipe for the pizza crust only. Whatever you like on pizza is your toppings. We used tomato sauce, mozzarella cheese and pepperoni.

You could although I tried that and wasn't happy with the texture. The tapioca makes the texture more chewy and resembles typical pizza dough.

Tapioca flour is a super high carb starch. 🙁 If you're trying to avoid blood sugar spikes, this is not the ingredient you want to use. There are similar recipes that don't call for tapioca flour though! Try the original fat head pizza recipe!

Was watching a Dr Oz episode with a dietician and she served a bread with Tapioca flour that people said tasted really good. She also said that Tapioca flour is a resistant starch. I don't know if that helps you.

Does this taste eggy at all? I can't stand when I bake with coconut flour and have to use a lot of eggs because most of the time it is somewhat eggy and it grosses me out. There are a few coconut flour recipes I have made that aren't eggy at all but more times than not, it's eggy. How is this one?
