Best Keto Pizza Recipe -Nut Free Fathead Dough
Pizza is one of the most guilty pleasures we indulge in when trying to watch our weight, lose weight or even just eat healthier.
It tastes so bad for you and well.....usually it is. Loaded with hefty toppings galore, one piece is never enough. It's never enough because traditional pizza is not made with healthful flours that would keep you full and satiated.
Do you know anyone that can eat one piece of pizza? Neither do I.
But Fathead dough, keto pizza dough, has changed the world for all us on a ketogenic diet and low carb-ers!
What is Fathead Pizza Dough?
I'm not the first one to create this type of pizza but the original recipe, called Fat Head Pizza. The orginial fathead pizza dough was made using almond flour, cream cheese and mozzarella cheese, and it was genius!
But when you have a child with a nut allergy, making anything with almond flour is an issue so I use coconut flour and I think it works fabulously!
The first time I tried the original recipe with my adaptions to the nut flour, the pizza was too small for a family of 5.
I'm certainly not going to make a keto pizza dough all for myself, so I reinvented and worked on their recipe to make it work for us in our family. This way it is plenty big enough for everyone to have at least 2 pieces if they wished.
I'm just thrilled I can make a pizza for pizza night that my entire picky family will eat and it's low carb and keto and absolutely delicious!
Simple Ingredients Needed
This keto pizza recipe makes two-12 inch round pizzas or one large 12 by 16 rectangular pizza. Divide all ingredients in half if you prefer to make one, 12-inch round pizza.

How to Make Keto Fathead Pizza Crust
Preheat oven to 425 degrees F.
NEW EASY METHOD: Place all ingredients into a food processor and process until combined.
Remove and place into a microwave-safe bowl and microwave for 2 minutes or double boiler to melt mixture over low heat on the stove.
Stir again to combine.
Wet your hands and spread mixture onto a parchment lined baking sheet or use a rolling pin between two pieces of parchment. I did try to make this without parchment paper. I greased the pizza pan and maybe it was my baking sheet pan, but it did stick, which I hate.
So a piece of parchment paper works. May not be as crispy on the bottom as you might like, but it is what it is and it works for us. You could also try a pizza stone to get it a crispy crust.
For a thin crust, measure out a 12 x 16 rectangle or this recipe makes two 12 inch round pizzas.
Spread as evenly as you can all the way to the edges of the pan, continue to wet your hands with water if necessary to prevent sticking.
Using a fork make holes into the crust.
Bake for 12 minutes or until slightly browned.
Add your toppings and bake 5 more minutes to melt cheese.
Low Carb Pizza Crust versus Regular Pizza
Regular pizza contains wheat, gluten and is definitely not low carb or keto friendly, but there are many options for a low carb pizza crust and one of my favorites is the cauliflower pizza crust.
One of my most popular keto pizza on my website is this cauliflower pizza crust. I personally love it, but my family could taste the difference in the crust as opposed to using this fathead dough pizza crust.
While I love my cauliflower pizza recipe, this fat head pizza dough resembles more of the texture that my kids enjoy.
With this fathead pizza they could eat it weekly and not tire of it or complain.
Why? Because it clearly resembles a real flour dough pizza! Unlike cauliflower crust pizza which is hard to hold and easier to just eat with a fork, this pizza can be held like a traditional piece of pizza.
Keto-Friendly Toppings
You could make my quick homemade marinara sauce or purchase Rao's marinara which is low carb.
Our favorite toppings are simply mozzarella cheese and pepperoni, but sautéed onions, peppers and mushrooms would also be keto friendly and delicious.
How to Store Keto Pizza Recipe
Store any leftover pizza in an airtight container in the refrigerator for up to 3 days.
How to Reheat Leftover Pizza
Reheat slices of keto pizza in an air fryer at 400 degrees F for 2-3 minutes or bake in a conventional oven at 375 degrees F for 10 minutes.
Is Coconut a Nut?
I'd like to clear up this constant question get asked almost daily about whether coconut is a nut. While the US Food & drug Administration (FDA) claims that coconut is a tree nut becomes it comes from a tree, it is in fact a FRUIT. People who have tree nut allergies may be allergic to coconut as well, but being allergic to coconut is not the same as having a tree nut allergy.
My own son was diagnosed with a Peanut and Tree Nut allergy at the age of 2. He has safely eaten coconut all these years without issue and he is now 14. Coconut is a fruit, called a drupe. It's like a peach with a pit.
The American College of Allergy, Asthma and Immunology says it well: "Coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. If you are allergic to tree nuts, talk to your allergist before adding coconut to your diet."
Frequently Asked Questions
Can I add yeast to the keto pizza dough?
Yes you can add yeast to the dough but please understand that it will only provide flavor, it will not make the dough rise and we are not activating the yeast with sugar.
Can I swap the eggs out?
Yes, if you need to remove the eggs due to an allergy, you can replace them with 4 ounces more of cream cheese.
Can I freeze keto pizza dough?
Yes you can freeze this keto pizza dough. I would actually bake the dough as a round 12 inch pizza, allow to cool, do not add any toppings. Cover with parchment and wrap with foil. Freeze the cooked pizza shell for up to 2 months.
Can I make this with almond flour?
Yes, if you have a coconut allergy you can replace the coconut flour used in this keto pizza dough recipe with 2 cups of almond flour. If the fathead dough is sticky, add ¼ cup more almond flour.

Can you clarify how you got 2 net carbs/serving for the pizza crust? From my calculations, the mozzarella cheese is 32 net carbs, the cream cheese is 5 net carbs, and the coconut flour is 16 net carbs totaling 53 net carbs for the crust alone. That would be 4.5 net carbs per slice if you had 12 slices.

I am planning to make this pizza tonight and was wondering how large of a baking pan you use? You mentioned for thin crust, press it out to a 12x16 inch rectangle, but is that what you made, re the thin crust?

Yes that's what I made or make a thicker pizza crust by just using a smaller sized baking pan or a round pizza pan, maybe a 9 inch.

I have been holding on to this recipe for the last two weeks and today, decided to go for it. I am so glad I did! Not only was it delicious but I already have started planning on using it for calzones and maybe even garlic knots! As an added bonus, I had family show up for a surprise visit tonight and they brought a couple of pizza pies for the family. I went right to the fridge, grabbed one of these slices and heated it up. Tried this recipe last weekend and it was awesome! I'm thinking about modifying it a little to make taco pizza. Use taco seasoning instead of Italian seasoning and maybe subbing either cheddar or pepper Jack in for part of the mozzarella. Have you tried putting different cheeses in it?

I just made this pizza again I use Gouda cheese. And it works well. Only this time I didn't the fat head dough. I thirst mixed little blocks of cheese and schreef er coconut very fine. Then added the rest and mixed a minute or two until it wa thick. I spread that even on a baking sheet and baked it until it was turning in golden brown and put the topping on of and baked a few more minutes. It tasted great so if you need a shortcut it is possible.

My husband is allergic to coconut so is coconut flour the same? Is there a sub for the coconut flour? Is the garbanzo bean flour measured the same?

If he's a allergic to coconut then he shouldn't have coconut flour. I've not tried garbanzo bean flour since it isn't low carb. I'd suggest just looking for a low carb pizza made with almond flour.

I've tried it without the parchment paper, but you need a really good like new baking pan so it doesn't stick and yes it will get crispy.

Im so confused, many of your comments are discussing tapioca flour, but I dont see it in the recipe and one of the replies actually said there isnt any in the recipe. PS I halfed the recipe and sub'd 2 tablespoons of coconut flour with oat fiber flour (6 Tbl coconut flour + 2 Oat flour) and I added 1/2 tsp baking powder and they came out excellent! I used the recipe to make stuffed breakfast rolls and they were amazing! Thanks for the recipe!

Just finished eating some...it was delicious! Thanks for such an awesome recipe. I did one major substitution: I swapped out the eggs for flax eggs because I'd heard that fathead dough can be prone to tasting 'eggy'...but my results were successful! I even made it deep dish style in a wax paper-lined 8x8 baking pan, though I might omit the paper and just oil the pan next time as the crust got stuck in some areas. I whipped up a quick pizza sauce and crowned my pizza with mozzarella, turkey smoked and breakfast sausage, ground beef, and turkey pepperoni. I am very pleased with my experiment and will make this again! Thank you!

This crust is so much more bread-like than the original fathead crust I am doing an experiment. Instead of the herbs in the recipe I mixed in poultry seasoning and ground sage (I left out the onion and garlic powders) after its baked I'll cut into small cubes and dry them out in low heat oven and use the dried cubes for turkey stuffing following my old full carb recipe. Sure hope it works!!
