Grilling is the essence of summer time don't you think? It's so easy, there's no heating the oven so the house stays cooler and it's just nice to be outside cooking!
This recipe is so simple and really adaptable as far as the veggies you pick. It only takes about 10 minutes to prepare and about 10 minutes to cook the kabobs on each side. It's a 30 minute dinner, who doesn't like that?!
You just clean and wash your vegetables, prepare your ground turkey meatballs and start skewing.
I slightly adapted my Turkey Meatloaf Muffin recipe last week and was ready to bake them in the oven and thought, "why can't these be grilled instead?" And.it.was.so. 🙂
The balsamic glaze is delicious but if you are short on time and can't bring it to a boil to thicken, you can simply whisk it in a bowl and still use to coat the veggies and meat on the grill. It's better when it's thicker, but it can still work. I've also made the glaze using red wine vinegar when I've run out of balsamic. Still tasty but balsamic is better!

Grilled Turkey Meatballs with Balsamic Glaze
Ingredients
Meatballs
- 1 egg
- ⅓ cup grated Parmesan cheese
- 2 teaspoon minced garlic
- 1.5 pounds ground turkey
- 1 zucchini sliced
- 8 ounces mushrooms
- 1 pint grape tomatoes
- ½ teaspoon salt
- ⅛ teaspoon pepper
Balsamic Glaze
- ⅓ cup balsamic vinegar
- 2 teaspoon olive oil
- 2 teaspoon minced garlic
- ¼ teaspoon sat
- ⅛ teaspoon pepper
Instructions
- Combine egg, Parmesan, and garlic with salt and pepper.Add ground turkey and mix well. Make 12 meatballs.
- Skew 1 meatball and vegetables on each skewer. Set aside.
- In a small saucepan whisk glaze ingredients together.
- Bring to a boil, reduce heat.
- Simmer uncovered for 3-5 minutes until in reduces and starts to thicken.
- Heat your grill to medium high heat.
- Place your kabobs on grill and cook for about 10 minutes.
- Brush half the glaze over the top of the kabobs and turn them over to cook another 10 minutes on that side.
- Brush with the rest of the glaze on this side. Internal temperature of meatballs should be 165 degrees.
