Healthier Mayo Free Waldorf Salad: Vegetarian & Gluten Free

 

 

It’s apple season!!!

Here is a healthier way to use up all the apples you’ve picked at the apple orchard instead of making apple deserts, which I have nothing against of course,ย  but still. ๐Ÿ™‚

Made without mayo and healthy plain Greek yogurt, you are getting in a great amount of protein, but it is a meat free dish!

 

 

When I made this recipe my daughter had some friends over and they were able to taste test it and loved it!

Top it over some mixed greens and you’ve got a fabulous Meatless Monday dinner or serve it as a side dish. Either way it is sure to please and I promise you…… no one will be asking, “Where’s the meat!”

Healthier Mayo Free Waldorf Salad: Vegetarian & Gluten Free

Ingredients

  • 2 cups chopped apples
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1 cup chopped celery
  • 1/2 cup raisins
  • 1/2 cup plain nonfat Greek yogurt
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • optional: 1 teaspoon honey

Instructions

  • Add the first 5 ingredients to a serving bowl.
  • Mix the yogurt, oil, lemon juice and honey in a small bowl then toss with the fruit and nuts.
  • Cover and refrigerate for about an hour before serving.

    Thank you so much for this recipe!! I took it to a work potluck and everyone loved it. I took it to my sisters birthday party and everyone loved it. We even had it for breakfast the following morning. This is my new favorite salad and it is so easy to make!! I used lime instead of lemon juice and did not put the oil in.

  2. Just made this with shredded green cabbage (because I don’t like raw celery), without pecans (because I didn’t have any) and added the honey. The yogurt “sauce” is delicious! I’m looking forward to eating some tomorrow!

  3. I love this salad but I make it a little different from yours. I make mine with plain non-fat yogurt, leave out the olvie oil and add in craisins. ๐Ÿ™‚
