Who doesn't love a good fry? Who doesn't love a healthier fry that still tastes delicious yet NOT fried and is a super food?!! Yep! Sweet potatoes are considered one of 10 Super foods to eat to maintain optimal health according to Diabetes.org.
Sweet potatoes are full of fiber and high in Vitamin A, Vitamin C, iron, beta carotene, potassium and calcium! If that's not enough to eat one I don't know what is!
You can enjoy them baked or even mashed but my family enjoys them more when then can pick them up with their little fingers! My kiddies enjoyed my Easy Baked Sweet potatoes which are round, sliced, like chips. Now they love these fries and can't get enough of them. I never have any left overs when I make these!
Slice them as thin as you like or even make them like steak fries and a bit larger. The thinner for my kids the better!
Mix up the seasoning mixture with some oil, toss them in a bowl, lay them on a baking sheet and bake, so simple! In order to use less oil than necessary I use nonstick cooking spray or olive oil cooking spray, whichever you have on hand. Spraying them lighter before cooking, then once more when turning them over, really seals in that seasoning mixture well.
You can make individual servings in a small glass making a cone out of parchment paper. Perfect for small hands to enjoy! Easy for party entertaining as well and just prettier than plopping them in a bowl don't you think?

Healthy Baked Sweet Potato Fries

Ingredients
- 6 small sweet potatoes (about 2 pounds) , peeled, quartered and sliced
- 1 teaspoon paprika
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons garlic powder
- 1 teaspoon ground cinnamon
- 2 tablespoons extra virgin olive oil
- nonstick cooking spray
Directions
Preheat your oven to 450 degrees. In a small bowl pour the oil and stir all the seasonings into the oil. In a large bowl place the sliced sweet potatoes. Pour the seasoning mixture over the potatoes and using tongs or your hands try to evenly mix and coat the sweet potatoes. Spray a large baking sheet (you may need 2 baking sheets) with cooking spray. Lay the sweet potatoes on the baking sheet, do not overlap. Use the cooking spray to lightly coat over the sweet potatoes. Bake for 10 minutes, turn them, spray with cooking spray again and bake 10 more minutes until tender. Cool for 5 minutes before serving.
