This delicious homemade low carb keto carnivore ice cream has a rich and creamy texture just like traditional ice cream yet it’s sugar free! This recipe doesn’t need an ice cream maker, but directions for the Ninja Creami are also provided.

What is the Carnivore Diet?
If youโve been following me for a while, you know Iโm all about a sustainable, sugar-free lifestyle without deprivation. So, what exactly is a carnivore diet, and how does it fit into a low-carb or keto lifestyle?
The carnivore diet is an animal-based way of eating, meaning it focuses entirely on foods that come from animalsโmeat, fish, eggs, and some dairy. There are no plant-based foods like vegetables, nuts, or fruits.
While it may sound extreme, many people find that eliminating plants reduces inflammation, improves digestion, and helps with weight loss.
Now, you might be wondering, Isnโt keto already a low-carb diet? Yes! But keto allows for some carbs, even from low-carb veggies, nuts, and sweeteners.
A carnivore lifestyle takes it a step further by eliminating all plant foods, making it zero-carb or very close to it.
This way of eating can be incredibly healing, especially for those struggling with autoimmune issues, gut problems, or stubborn cravings.

Allulose or Honey on a Carnivore Diet
The keto diet is a low-carb, high-fat lifestyle designed to put your body into ketosis, where it burns fat for fuel instead of carbohydrates. Because ketosis depends on keeping carb intake low, the types of natural sweeteners used matter.
While honey is a natural sweetener, itโs high in sugar and carbs, which can spike blood sugar and kick you out of ketosis.
Even though itโs a more natural option than refined sugar, itโs generally not considered keto-friendly. I personally do not include it in my ketogenic diet as it does cause me to have sugar and carb cravings.
That said, some people following a carnivore diet do choose to include small amounts of raw honey, especially those who follow a more animal-based foods approach rather than strict zero-carb carnivore. They may view it as a natural, nutrient-dense source of carbohydrates that can be beneficial in small amounts, particularly for athletic performance or metabolic flexibility.
Allulose and Keto
Allulose, on the other hand, is a rare sugar found in small amounts in foods like figs and maple syrup. The body doesnโt metabolize it like regular sugar, meaning it has little to no impact on blood sugar levels or insulin. Because of this, allulose is a popular keto-friendly sweetener that can be used in recipes without affecting ketosis.
Bottom Line
While honey is generally too high in carbs for strict keto, those on a more flexible carnivore approach may choose to include it in moderation.
For keto-friendly sweeteners, allulose, monk fruit, and stevia are great options that I use regularly in my keto low carb recipes for adding sweetness without disrupting ketosis.

Raw Dairy versus Regular Store Bought Dairy
When it comes to the carnivore diet, some people include dairy while others avoid it completely. But for those who do enjoy dairy, many prefer raw dairy over regular pasteurized dairy productsโand for good reason!
1. Easier on Digestion
Raw dairy still contains natural enzymes, like lactase, which help break down lactose. Pasteurization destroys these enzymes, which is why so many people struggle with digesting regular dairy. If youโve ever felt bloated or uncomfortable after drinking milk, raw dairy might be easier on your gut.
2. More Nutrients & Enzymes
Since raw dairy isnโt heat-treated, it retains more of its natural vitamins, minerals, and beneficial bacteria. Pasteurization can destroy B vitamins, vitamin C, and probiotics, which are all important for overall health.
3. No Additives or Preservatives
Most store-bought dairy products contain additives, stabilizers, and preservativesโthings I try to avoid as much as possible. Raw dairy is as pure and natural as it gets, without any unnecessary ingredients.
4. Less Inflammatory for Some People
Some people find that raw dairy causes less inflammation compared to regular dairy which sometimes causes digestive issues in some people. This could be due to the presence of A2 proteins (found in milk from certain breeds of cows) or the fact that raw dairy still contains all its natural enzymes and probiotics.
5. Better Taste & Quality
Letโs be honestโraw dairy just tastes better! Itโs richer, creamier, and more satisfying. If youโre a dairy lover, youโll definitely notice the difference.
Not everyone on carnivore includes dairy, and thatโs okay! But for those who do, choosing high-quality raw dairy from a trusted source can make a big difference in digestion, nutrition, and overall enjoyment.

Why Some People Use Raw Egg Yolks in Carnivore Ice Cream (And Why I Donโt!)
If youโve seen carnivore ice cream recipes before, youโve probably noticed that many people use raw egg yolks to create that rich, creamy texture.
Egg yolks add healthy fats and nutrients, and since carnivore dieters are all about whole, nutrient-dense foods and animal-based ingredients, raw yolks are a common choice.
But hereโs the thingโIโm not comfortable using raw eggs in my ice cream. While plenty of people swear by it and trust their egg sources, I prefer to reduce the risk of salmonella by gently heating my yolks instead.
So hereโs what I do instead: I use a double boiler method to slowly heat the yolks to 160ยฐF, which is the temperature needed to kill off any potential bacteria. This means I can still enjoy the benefits of egg yolks for a creamy dessert ice creamโwithout worrying about food safety!
To do this, I place my egg yolks in a heat-safe bowl over a pot of simmering water and whisk continuously until they reach the right temperature. Itโs a simple extra step that gives me peace of mind, and the result is just as creamy and delicious!
If youโre comfortable with raw yolks, go for it! Just skip the method below in the recipe card for cooking the eggs and just fold into the whipped cream instead.
But if youโd rather play it safe, this method is an easy way to enjoy a homemade keto carnivore ice cream experience without the risk.

Two Ways to Make My No-Churn Vanilla Carnivore Ice Cream (But One is Better!)
When I set out to make carnivore ice cream, I wanted a recipe that was simple, creamy, and didnโt require an ice cream makerโbecause I know not everyone has one! So, I tested two different methods to see which worked best.
Method 1: Freezer-Only (No Machine Needed!)
For the first batch, I cooked my egg yolks to 160ยฐF, mixed them with whipped cream, and poured the mixture into a container to freeze overnight.
While it did firm up into ice cream, it was very hard straight out of the freezer and needed to sit at room temperature for a while before it was scoopable. The texture was good, but not as smooth as traditional ice cream.
Method 2: The Ninja Creami (Game-Changer!)
With the second batch, I took the same ice cream mixture and poured it into two Ninja Creami pint containers, freezing them overnight. The next day, I spun it in the Ninja Creami, and the result?
Super creamy, smooth, and just like real ice cream! No need to let it soften or struggle with hard scoopsโit was perfect straight from the machine.
Method 3: Traditional Ice Cream Machine
I have a KitchenAid ice cream Attachment and it works well for creamy ice cream but the only thing required is you have to have that bowl frozen overnight before you can use it. Since I did not have it cold in the freezer I opted for the Ninja Creami.
Pouring the ice cream mixture into a regular ice cream machine will also create the creamy texture typical to traditional ice cream.
Which One is Better?
All the methods work, so if you donโt have a Ninja Creami or ice cream machine, you can absolutely still enjoy this ice cream by freezing it in an airtight container.
But if you do have a Ninja Creami or ice cream machine or attachment for the Kitchenaid, I highly recommend using it! The texture is so much better, making it feel just like traditional ice creamโwithout the sugar or carbs.
I think if you have time to make this carnivore ice cream in the morning and want it later the same day within a few hours of making it, you will have a nice creamy soft serve ice cream texture.
If you need to make it and store it in the freezer overnight you will want to sit it out on the counter for some time to allow it to soften in order to scoop.

Can I lower the fat in this?
โI do not recommend swapping the heavy cream with a lower-fat dairy product since it just won’t give you that creamy texture and you will end up with ice crystals.
Something like canned coconut milk which is similar in it’s fat content and is more of an even swap to using full-fat dairy, but coconut milk would not be allowed if you are following a strict carnivore diet since carnivore meals consist of animal products.
A low-carb lifestyle or ketogenic diets would of course, allow coconut milk as a great option for a dairy free alternative to raw cream or heavy cream, since so many people get digestive discomfort from casein protein.

Ingredients
- 4 large egg yolks see notes above if you want to use raw egg yolks
- 2 cups raw heavy cream or if you can't find that where you live, regular heavy whipping cream is fine
- 1/4 tsp salt
- 1/3 cup Allulose liquid optional
- 1 teaspoon vanilla extract optional
Instructions
No Churn Method
- Use a double boiler or place a bowl over a pot of simmering water on low heat.
- Whisk the yolks in the bowl and continue to stir until it thickens, about 5-8 minutes.
- Stir constantly then test by scraping a wooden spoon along the bottom of the bowl. If you can clearly see the bottom when you scrape, it should be done. I also test using a meat thermometer and when inserting into yolk mixture it registers 160 degrees . Remove from heat and set aside.
- Pour the heavy cream, Allulose if using, salt and vanilla extract in a stand mixer with the whisk attachment. Blend until soft peaks form. Taste and adjust sweetener if needed.
- Stir a spoonful of the cream into the egg mixture to temper the eggs. Continue to spoon about 3 more times. Place the mixer on low speed and pour in the egg mixture to combine them together.
- Pour this into your loaf pan or airtight container and freeze for 3-4 hours for soft serve texture or 8 hours or overnight for hard ice cream. If you want to use a regular ice cream machine, simply pour the mixture into your ice cream bowl and churn until desired consistency. Ninja Creami
- Following all the steps to make the ice cream above from the no churn method then pouring into 2 pint Ninja Creami Containers and freezing for 20-24 hours.
- Remove container cover and insert into the base of the Ninja Creami. Cover lid and press regular ice cream button. Remove, stir a bit then recover and hit Re-spin button. Ready to enjoy immediately. Do the same with the second pint container. You can also separate individual servings after spinning and placing into a glass container, this way you can soften in the microwave if needed.
