Instant Homemade Sugar-Free Chocolate Pudding Mix is an easy recipe that takes only 5 minutes to prepare!

When you’re a foodie who loves food and loves to cook, but wants to be free of cooking and baking with sugar, there is what I call a foodie bucket list! My foodie bucket list is currently a white board in my office of all the recipes and ideas I think of or happen to see or can’t wait to try a remake on. The board is full and always stays full. There is not one empty space to writeย on it unless I cross off or erase an item I’ve made which of course, always thrills me!

Making a dry pudding mix has been on my foodie bucket list for a long time. I’m not sure the reason for my hesitation or delay but one thing is for sure; it’s quick, much healthier than anything you can purchase and made sugar free!

So what do you think prompted the sudden desire to finallyย push me into making dry sugar free pudding mix? I was half asleep watching Alton Brown on the cooking channel and he was making instant pudding mix! I popped up from my slumber andย  took notes on what he was using and adapted from there! The next day I was bursting with excitement and couldn’t wait any longer to try my adaptions!

I’ve made sugar free and dairy free pudding before, but never attempted a mix. Having a dry mixย brings me a sense of accomplishment as a mom.ย ย Now I can make it once and get more than one serving out of it! With 3 kids who like pudding and a mom who wants some too, well you get the idea. I need at least 4 servings in one shot. I want to get the most bang for my buck in the kitchen, especially in the summer.

This dry pudding mix and be stored in your pantry for a good 6 months! Mine would never last that long lol!

Instant Homemade Sugar-Free Chocolate Pudding Mix

Ingredients

Dry Pudding Mix

  • 1/2 cup instant nonfat dry milk powder
  • 1/2 cup arrowroot powder
  • 1 teaspoon salt
  • 1 cup unsweetened cocoa powder
  • 2/3 cup erythritol I used Swerve
  • 1/4 teaspoon pure stevia extract

Prepared Pudding

Instructions

  • Combine all dry pudding ingredients together and keep in an airtight container for up to 6 months. Makes 2 1/2 cups.
  • To Make Pudding: In a sauce pan measure out 3/4 cup of dry pudding mix and whisk with 1 cup milk and 1 cup heavy cream.
  • Bring it to a boil then turn to low heat and simmer 3-4 minutes.
  • Turn off heat and add vanilla extract and liquid stevia.
  • Pour pudding through a fine sieve and place into serving glasses or a bowl.
  • Cover with plastic wrap directly on pudding and refrigerate 4 hours.

    I donโ€™t want to sound mean but if you have to cook it then it isnโ€™t instant. Iโ€™ve yet to find a DIY instant pudding mix.

  3. Do you have a recipe for *instant* pudding, as it is named? I was so disappointed to find that this is definitely not an “instant” pudding recipe, but a regular cooked sugar-free pudding.

    1. Iโ€™d be interested in this as well. I (successfully) did Medifast for awhile and the chocolate pudding mix packets were my favorite โ€” Pour mix in a mug, add water, and stir. But the MF products price kept rising, and I had to quit. Gained back unwanted pounds.

      Iโ€™ve been looking for a dry instant mix I can take to work and just add water to prepare. I was hoping your recipe would do that. If anyone has any suggestions, Iโ€™d love to hear them.

  5. Thank you! I am super excited to try this recipe! My husband just got put on a grain free/sugar free diet. Easter is coming up and I was trying to figure out some kind of dessert for our family. We have one that I traditional make, but I couldn’t figure out how to replace the pudding mix. This has no corn starch (GRAIN!) and no sugar. I am so excited. I’m going to be able to make our traditional dessert for Easter. Hopefully this will leave him feeling less deprived. ๐Ÿ™‚

    Thank you for this recipe! I need a dessert I can eat when my husband is devouring ice cream. This sounds perfect and I like the fact that I can make the mix and keep it on hand to whip up when I feel the need. Great blog you have here.

    1. Jolene, I was wondering the same thing, I found a couple recipes online with xanthan and for recipes that use 4 c. milk they used 1T. xanthan. HTH!

  7. Amazing. I would never have guessed from looking at those luscious little pudding cups that they’re sugar-free! This sounds like the perfect thing to keep on hand for a quick-fix dessert in case you get surprise guests (or just a surprise middle-of-the day craving for something chocolatey).

    1. I am on keto and carb count is more than what I want one cup equals almost 13 carbs. Iโ€™m doing 20 or less. That leaves hardly any for rest of day.

    2. These carbs come from the powdered milk. I would bet you could substitute powdered coconut or almond milk. In fact, thanks for the question! I’m going to try one of these substitutes.
