Keto Antipasto on a Stick is one of the best ways to serve a crowd for a party!
Antipasto
Antipasto means "before food" in Italian. It is the first course or appetizer for all Italian meals and parties. It's just not an Italian feast without antipasto! The usual items are cured meats, pickled vegetables like mushrooms, peppers, and artichokes, aged cheeses, and olives. You can get really creative and make a spectacular charcuterie board, but showcasing antipasto on a stick makes for an easier way for your guests to grab -n-go and then mingle.
Antipasto Kabobs
All of the items needed for antipasto are actually already low carb and keto. Often though, antipasto might include crackers or bread to dip with the marinated vegetables. But choosing antipasto items for serving as a keto kabob is fun and simple to do. I chose items that you can enjoy on the carnivore diet. Keto carnivore allows meats and even dairy items. If you want a few more options and you're not worried about keeping it carnivore, simply add some olives, and vegetables.

This is another creative way to keeping it simple on the keto diet. Just another way to show your family and friends that eating keto isn't crazy, doesn't deprive and is actually quite satisfying that any other way of eating. I think when you can show your non keto family and friends that it doesn't take huge amounts of prep to eat this way, they may even come around one day themselves or at least that's my hope for all my extended family. I find the less I preach or nag and just show what I love eating, the more receptive they are to trying new things. Of course when they see how you are personally thriving by eating a keto diet and maybe lost weight besides other health benefits, that truly is the best evidence for them. You can't make anyone do what you want them to do. They have to be ready for change. I think when they have tried all sorts of diets and haven't been successful or were unable to maintain their weight loss, they will finally come around. I am still waiting on this for my entire Italian family!

Keto Antipasto Skewers
Ingredients
- 6.5 ounces dried uncured salami or 16 thick slices
- 5 ounces uncured cooked pancetta or 16 thin slices
- 9 ounces uncured pepperoni or 32 thin slices
- 8 ounces fresh mozzarella or 16 balls
Instructions
- Start with a slice of salami, then fold a slice of pepperoni, add a folded piece of pancetta, another piece of pepperoni and finally top with a mozzarella ball.
- Optional ideas: olives, pickles, veggies
- Keep refrigerated until ready to serve.
