Have you seen the 2-ingredient cottage cheese fudge on tiktok?
I haven't tried it because to me it doesn't look like it has the best texture and isn't a very smooth cottage cheese mixture that resembles a smooth fudge so I wanted to work on my own recipe for it.
Cottage cheese is the new cauliflower and I'm here for it bringing you amazing high protein low carb keto recipes using it!
If you're on a keto diet, always check the ingredients on tiktok- make the dessert recipes that don't include regular refined flours and refined sugar because added sugar and carbs will feed your sweet tooth, spike your blood sugar and cause cravings.
I use full-fat cottage cheese for this keto peanut butter fudge because it provides the creamy texture that really resembles traditional fudge recipes made with refined sugar.
You could use low fat or fat-free cottage cheese if you prefer, but please know you won't get as much of a creamier texture as I did using full-fat cottage cheese.
The specific brands of cottage cheese I use are lactose free brands, Lactaid and Green Valley. If you don't need lactose free, Good Culture and Daisy brands are great as well.
Tools to make this easy keto fudge
I used my food processor, but a high-speed blender will work, but just know that when using a high speed blender, the creamy peanut butter tends to get clumpy when mixed with the cottage cheese.
You may need to pulse it and use a spatula to stir it a little bit before adding the melted chocolate.
You also also use a large mixing bowl with an electric hand mixer.
If you don't want to use a microwave safe bowl to melt the chocolate chips with butter in 30-second intervals, you could add water to a small saucepan.
Place a bowl to fit over the sauce pan and melt the butter and chocolate chips over low heat, this acts like a double boiler.
Natural Sweeteners
I listed chocolate liquid monk fruit as optional for this creamy fudge because the sugar-free chocolate chips are sweetened with stevia.
For best results, just taste the mixture and decide if it's sweet enough, if not add your favorite low carb sweetener. Here's my sweetener guide & conversion chart.
Lily's brand has dark chocolate, semi-sweet chocolate and milk chocolate chips, they also have a peanut butter flavored chocolate chips which might be a fun sweet treat if you want to remove the chocolate flavor and have it be even more peanut butter flavored keto peanut butter fudge.
Can I swap the cottage cheese?
I haven't tested this fudge mixture with swapping the cottage cheese with anything else, but ricotta cheese is a good option because it has about the same amount of protein.
I haven't tried swapping the cottage cheese with heavy cream, but this creamy milk chocolate fudge does use heavy cream so it might work.
I haven't tested swapping cream cheese with the cottage cheese but I do think it would be a great option, but it won't have the same amount of protein.
Can I replace the chocolate chips?
Replacing the chocolate chips would effect the texture of this high protein snack.
In my opinion if you replace the chocolate chips with unsweetened cocoa powder, you will have a firm texture and it may also be a bit dry.
Optional Toppings
There are so many options for toppings on this sugar free fudge.
I'd recommend my favorite toppings of chopped peanuts, or sugar free chocolate chips or just melt chocolate chips and drizzle over the top.
But the peanut butter drizzle I've shared below over the top of this fudge is decadent and satisfying!

Sugar Free Low Carb Peanut Butter Cottage Cheese Fudge
Keto Chocolate Peanut Butter Cottage Cheese Fudge
Ingredients
- 1 cup Peanut butter no sugar added
- 1 cup cottage cheese (I used lactose free, 4%)
- 1 cup sugar free chocolate chips
- 4 tablespoon salted butter
- ½ teaspoon chocolate liquid monk fruit optional
Optional Peanut Butter Topping
- 2 tablespoon peanut butter
- 1 tablespoon butter or coconut oil
Instructions
- Line an 8 by 4 loaf pan with parchment paper.
- Place the peanut butter and cottage cheese into a high powered blender or food processor. Blend until combined. Set aside.
- Add the chocolate chips and butter to a microwavable bowl and microwave for 1 minute. Stir until smooth. Alternatively, you can melt butter and chocolate chips in a small sauce pan over low heat on the stove.
- Pour the melted chocolate into the blender or food processor and blend until smooth. Taste and decide if it's sweet enough, if not feel free to add in your favorite low carb sweetener.
- Spread into your prepared loaf pan and refrigerate for 1 hour. If using optional peanut butter topping, melt the peanut butter and butter together and pour over cold fudge. Place back in the fridge for at least 30 minutes.
- Store fudge in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
