What is Cloud Bread?

Cloud bread, also known as Oopsie Bread, is a low carb bread made with just a few ingredients. Itโ€™s high protein, gluten free, low carb, low calorie, and keto friendly, making it a great option for those with dietary restrictions.

This bread dates back to the 1970โ€™s when the Atkins diet was introduced. The texture is light and airy, resembling more of a meringue like texture. I tried the orginial version using cream cheese and felt it just stuck to the roof of my mouth and was not appealing at all.

I adapted my own version and turned the cloud bread into a loaf with much better taste and texture.

The newest version is Dairy Free Cloud Bread Loaf and today I’m showing you how to turn the loaf into mini keto bagels!

What Does Cloud Bread Taste Like?

Traditional cloud bread tastes a lot like meringue, light, airy and not much too it as far as texture.

This dairy free cloud bread is like no other version you’ve ever had. These dairy free cloud bread bagels has amazing texture and chewiness!

Keto Cloud Bread Bagel FAQs

Can I replace the Egg White Protein with Whey?

Yes you can replace the egg white protein powder with whey protein but the loaf will deflate some so you have been warned. The texture will be different than using egg white protein but will still taste delicious and more similar to my Cloud Bread Loaf with dairy.

Can I replace the mayonnaise with dairy?

I would not replace dairy for the mayonnaise because then you will essentially have my previous cloud bread recipe and you won’t have the same texture.

Can I replace the mayonnaise with avocado oil?

No, the texture will not turn out the same if you replace the mayo with avocado oil.

Can I replace the eggs with an egg free substitute?

No, do not replace the eggs with an egg free substitute. You will end up with a dense bread as hard as a rock.

Can I make these into rolls?

Yes you can make my dairy free cloud bread into rolls instead of a loaf if you prefer. You will bake for 30 minutes and you will need this hamburger mold for best results.

What can I replace cream of tartar with?

If you don’t have cream of tartar you can substitute white vinegar. I used 1 teaspoon to replace 1/2 teaspoon cream of tartar.

Do I need to use the liquid Allulose?

No you can replace the liquid Allulose I used with granular Allulose if that’s all you have on hand. But be warned that the granular or another low carb granular sweetener could make your blender too thick to blend. You may need to add water to the granular to be able to mix in blender.

Best option might be to mix using a hand electric mixer instead. You could also just leave out the Allulose as some commenters have had success making the bread minus the Allulose.

How to Make Cloud Bread Bagels

Ingredients

You need eggs, cream of tartar, egg white protein powder, mayonnaise, baking powder salt and Allulose.

Directions

Preheat oven at 300 degrees F.

Place your egg whites in a stand mixer with the cream of tartar and whip until stiff peaks. This should take about 10-15 minutes. Set aside.

Place the egg yolks in a high powered blender with the remaining ingredients and blend until smooth.

Spoon some of the yolk mixture into the whipped egg whites. Do this in 3 batches until combined.

Grease 18 silicone donut molds and pour batter into each to the top.

Bake on the middle shelf of oven for 25 minutes. Shut the oven off but do not open the door and allow it to stay 10 more minutes in the oven.

Is this the same as Protein Sparing Modified Fast Bread?

Cloud bread has fat in it, though high in protein just like protein sparing bread, it is not the same bread in texture or taste.

Protein sparing bread is for those on a protein sparing modified fast and those looking to greatly reduce their fat intake.

  2. Why egg white powder rather than egg whites? I would guess that the moisture from the egg whites would make up for the dryness of my allulose powder, but is there another element Iโ€™m missing as I think about the recipe?

  3. Hi Brenda, My silicone donut pan has 6 holes. I would love to make 9 bagels, as the measurements are easier. I can either put the remaining batter or wait until the first batch comes out and the pan cools. Which should I do?

    I wish there was a recipe for dairy free keto two ingredient bagels. I just tried it with Kite Hill Greek yogurt and had yet another fail. I keep trying!

  4. Hi ! In Canada, Allulose is not authorised so what are my options? Powder erythritol with water ? What would be the measurements, quantities ?

    1. The recipe does not specify what to do with the egg white protein powder. I’m assuming you add this to the egg yolks? could you reply with some clarity?

    2. The first step is separating your fresh eggs, whites in the stand mixer with cream of tartar, that’s it and the yolks in the blender with remaining ingredients in the recipe, instruction #3.

    Iโ€™ve made these bagels twice now. The first time I didnโ€™t have the liquid Allulose and used a substitute. My family like them, but I thought they could be better. I made them again yesterday WITH the liquid Allulose and they turned out much better! Iโ€™m hesitant to toast them in a toaster, though, as Iโ€™ve used the mini bagel molds youโ€™ve suggested, and these are small (and very cute) bagels! Broiler? Which way works best?

    1. We have an open flat basket air fryer that also toasts, but a broiler might work too.

    I used this recipe in the bun mold. How many did you get? When I looked back at the cloud bread recipe you used sour cream vs mayo. This was a very thick mixture. There was no way I could pour it like in your video. Is there a difference between using the mayo vs sour cream? How many buns did you get? I got 7 and they were not filled to the top.

  10. How long will these keep, how should I store them, and can they be frozen and then thawed and toasted?

    1. We’ve had them on our counter in a sealed container for up to a week. Yes you can freeze, I’d slice them before freezing and then you shouldn’t have to thaw just toast from frozen.

    I am having one of these bagels the day after baking them and they are still amazing. The texture is so much better than the usual PSMF/cloud bread. The vinegar really helped my egg whites. You were right, they did collapse with the addition of yolks but the bagels rose just fine. Thank you so much for developing this recipe, I know it is a lot of work.

  14. The particular egg white protein powder you suggest is fairly expensive and there are other alternatives. Can these be used instead?

    1. Use code sugarfree10 and that will give you 10% off KetoChow egg white protein powder I used. Also Jay Robb is another brand that is good for egg white protein powder.

    2. ANY egg white ‘protein’, egg white ‘powder’ You can find will work great. Just make sure it has no additives except the lecithin. Those take a bit longer to beat than egg white by itself.

      Amazon has many kinds. Cheapest I have found is the NOW but depending on how much money You have and how much You can invest – IF You are sure this bread and bread products are Your thing – The Bulk Supplements can be quite a bit cheaper if You get up into a Large quantity.

      The powder goes quite fast so… 8lbs or 11lbs may seem like a lot but if You have a family or share bread and use it for buns, sub sandwiches, pizza, hot pockets, danish, cinnamon rolls… etc, it can go quite fast.

      Just make sure it is egg whites only but with lecithin is OK. Good hunting ๐Ÿ™‚
