Though a classic quiche recipe is typically made with a savory pie crust, you can enjoy this easy keto quiche without one and save yourself on the carb amount.
Most often a cheese quiche recipe uses a heavy amount of cream because of having a crust to help stabilize it, but I've got a technique below that works just as well for this creamy, savory, crustless keto low carb quiche.
Can I Swap Mascarpone with Cream Cheese?
Yes you certainly can use cream cheese if you don't want to purchase mascarpone. Cream cheese has less fat content than mascarpone and will need to be softened in order to spoon out into the quiche.
Mascarpone is Italian cream cheese using full fat cream which gives it a softy, velvety smooth texture right out of the fridge.
It does have a slight sweeter taste than American cream cheese, but in this keto quiche that sweetness is masked by the saltiness of the ham. I think mascarpone is the best cheese to use, but either will work in this delicious crustless keto quiche.
Type of Cheese Options
If you don't want to use mozzarella, another gooey cheese that would work nicely is Gruyere cheese, which is a type of Swiss cheese. Another good option to swap mozzarella with is shredded cheddar cheese, sharp cheddar cheese is what I prefer.
Can I swap heavy whipping cream with light cream?
No, you should not swap heavy cream with light cream or Half & Half because you won't get that delicious custard like quiche filling throughout the quiche.
CRUSTLESS LOW CARB QUICHE
While you can certainly add a keto pie crust, like my Coconut Flour Pie Crust, which is a very buttery crust, you really won't even miss it. Adding a sprinkle of grated parmesan over the greased pie dish helps prevent any type of soggy base.
This is exactly what I did for my Keto Crustless Spinach Pie recipe which has rave reviews. Of course you will save on the total amount of carbs having this keto quiche without a flaky crust, but again it's your preference.
How to Serve Keto Quiche
This is a very versatile recipe and can be enjoyed as a main dish meal with some low carb sides, like a simple green salad or can be enjoyed as a side dish along a protein entree of choice. Enjoy this as an easy keto breakfast as well.
Add Green Vegetables to low-carb Crustless Ham Cheese Quiche
Turn this into a broccoli quiche by adding cooked, tender broccoli florets to the chopped ham filling.
You could also add baby spinach to the mixture of eggs or even chopped and tender asparagus if you like. Please note, you will need to add the total carbohydrates of these veggies to your nutritional information below.
How to Make Crustless Keto Quiche
Simple Ingredients needed; butter, grated parmesan cheese, cooked ham, large eggs, heavy cream, mozzarella, salt, pepper, mascarpone cheese or softened cream cheese.
Directions
Preheat oven to 350 degrees F.
Grease a 9 inch pie dish with 2 tablespoons butter and place onto a large sheet pan. Sprinkle grated parmesan over the bottom of the dish.
Scatter the cooked ham into the bottom of the pie pan.
Whisk eggs, heavy cream, mozzarella, salt and pepper in a large mixing bowl.
Pour egg mixture over the ham in the pie dish. Drop tablespoon sized pieces of mascarpone all over the mixture in the dish. Alternately you can also whisk the mascarpone in with the egg mixture if you prefer then add to pie dish.
Bake for 60 minutes or until center is set, but still slightly jiggly. Allow to cool about 10-15 minutes before slicing and serving.
Enjoy immediately and place any left overs in a covered container in the fridge for up to 3 days.
Make Quiche into Individual Servings
If you want to make this perfectly portioned servings, you can use 8- 7 ounce ramekins and make individual quiche.
How To Store Easy Keto Quiche Recipe
Once you've enjoyed a piece and there are some leftovers, simply cover it well with parchment and plastic wrap or place individual slices in an airtight container for portion control and store in the fridge for up to 3 days.
If you want to freeze this quiche, simply cool completely, wrap well and freeze for up to 2 months. Thaw in fridge the night before you want to serve.

Keto Ham & Cheese Quiche
Ingredients
- 2 tablespoons butter
- 2 tablespoons grated parmesan cheese
- 8 ounces cooked ham chopped
- 4 large eggs
- 1.5 cups heavy cream
- 6 ounces mozzarella cheese shredded
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 4 ounces mascarpone cheese
