Sugar Free Keto Low Carb Cinnamon Rolls (Nut Free)

These Sugar Free Low Carb Cinnamon Rolls are made with Nut Free Fathead Dough! They’re Gluten Free, Keto and the texture is so much like traditional cinnamon buns you will shock your family and even yourself!

The holiday season, specifically Christmas is not complete without a breakfast of CINNAMON ROLLS, agreed?!!

These beauties can hold their own in deliciousness and easiness to traditional sugar carb laden cinnamon rolls.

The Magic Dough needs just a few ingredients to transform it into the texture you’ve been missing if you’ve been on a low carb diet for some time now.

NUT FREE FATHEAD DOUGH

Unlike the classic Fathead dough made with almond flour, my dough is made with coconut flour and honestly I don’t want to toot my own horn, but it’s pretty perfect in the ability to make you feel like your biting into a fluffy carby roll!

I’ve used this magic dough for many recipes being savory or sweet!

My most popular use of this magic dough is my FATHEAD BUTTERY DINNER ROLLS, also for PIZZA, CALZONES and Cranberry DANISH!

You can make this ahead, just cook it and don’t frost it. Once cooled after cooking, cover and refrigerate.

Reheat in the oven at 350 with aluminum on top so it doesn’t get too browned for about 20- 30 minutes. Remove the cover for the last few minutes then top with the frosting before serving the morning you want these.

HOW TO MAKE AHEAD CINNAMON ROLLS

I prepared this recipe and DID NOT bake it. I covered it well and tight with plastic wrap and refrigerated it on Christmas Eve. The morning of Christmas I let it sit on the counter for 1 hour before baking.

The only difference I noticed was that it took about 25 minutes instead of 15 minutes to bake in order for the dough to fully cook and get browned. I also reduced the amount of sweetener as a few comments mentioned it was too sweet.

I was out of the Sukrin brown sugar sub so I used Swerve confectioners instead for the Cinnamon “Sugar”. I prefer the Sukrin though, as I felt and my hubby, the Swerve left a bit of an aftertaste. But as far as texture it was just as good as having made it fresh.

My TASTE TESTERS:

  • Hubby- the carb and sugar lover actually LOVED these eating 3 of them! Claiming if I make these for Christmas he’ll not feel deprived at all or missing the kind from the can!
  • The two youngest kids loved them as well.
  • The picky teen, thought they were too sweet. UGH? Cinnamon rolls are meant to be a sweet treat. Anyway, I’ll take it, maybe his taste buds are changing and prefers less sweetness and for that I’m fine with.

CAN COCONUT FLOUR BE SWAPPED FOR  ALMOND?

Unfortunately coconut flour and almond flour can not be equally swapped in a recipe. Coconut flour is very dense and you only need about 1/4 cup to every 1 cup of almond flour, a big difference. You also need more liquids using coconut flour.

I’d say please try my coconut flour cinnamon rolls before saying you hate coconut flour. But if you have an allergy to coconut simply look online for a keto cinnamon roll recipe using almond flour instead.

Cinnamon “Sugar”

Cream Cheese Frosting

Instructions

  • Preheat the oven to 400 degrees F.
  • New Easy Method below in Notes or Combine the mozzarella and cream cheese and melt together either 2 minutes in a microwave or over the stove on low heat. Stir until smooth.ย 
  • Add the remaining dough ingredients, wet hand and thoroughly incorporate as much as possible. 
  • Roll the dough on a piece of parchment paper, top with another sheet of parchment since the dough is quite sticky, about 16 by 8 in. 
  • Slice into 12 strips. Set aside.
  • Combine the melted butter, sugar free sweetener and cinnamon. Mix well to combine, use half the mixture to spread onto the strips of dough. Roll them up and place them on a greased or parchment lined pie dish. Use the remaining butter mixture to pour over the tops of the cinnamon rolls. 
  • Bake 15-18 minutes. While they are baking you can make the frosting.
  • Add the frosting ingredients into a blender and blend until smooth. 
  • Once rolls are hot out of the oven spread the frosting over the tops of the rolls and enjoy! 

Notes

NEW METHOD:ย  Add all ingredients for the dough into the food processor, then add to a microwavable bowl and microwave for 2 minutes, it’s much better and easier to combine. Then proceed with recipe to roll it out, add cinnamon sugar filling and roll up using the ends of the parchment paper to help you roll it over. Then slice into 12 pieces and bake as follows.ย

  1. One of the comments mentioned almond flour but I don’t see that in the ingredient list only coconut flour. Hiw much would I add? I’d love to make these!

    1. Sorry I don’t recommend swapping almond with coconut because you need a lot more, it’s not an easy even swap. 1/4 cup coconut is about equal to 1 cup almond.

    These are amazing! I have made them many times. I put them in a muffin pan instead of a pie plate. One of my husbandโ€™s favorite. I reduce baking time to about 12 -13 minutes because I have a gas oven.

    I made these this weekend, it was 9pm and I decided I wanted cinnamon rolls for breakfast.LOL. This recipe was very quick to put together, and the tastes very good. I like mine sweeter so next time I will up the amount of sweetener.

    I have been making these for years using this recipe but have not commented before now. This is an excellent choice for someone like my diabetic husband who wakes up with a sweet tooth nearly every day…lol. Even before I was focused on cutting back on my sugar, I really enjoyed these.     I made cinnamon roll recipe and they did not turn ou right at all. I don’t know what I did wrong. They didn’t bake right at all, it seems like they were still raw not like they appear in the picture or the short video.

  9. can i ask why you would slice the dough before rolling, that seems like a bigger mess and hassle. is there a technical reason?

    1. I tried it both ways and felt I could get the rolls tighter and neater if I rolled them separately.

  10. So excited to try this but greatly disappointed. All my ingredients were fresh, but the rolls came out a mess. Flat and spread out on the bottom, not roll looking at all
    I’m so tired of trying Keto recipes and never having them turn out. All I’m doing is wasting ingredients and the ingredients you need to bake/cook this way are super expensive. I’ve wasted so much money, I’m about ready to give up.

  11. Iโ€™m a pretty accomplished baker but these came out flat and doughy. I used the โ€œeasy method โ€œ to prepare the dough. They barely puffed up as well. I even tried taking them apart to cook Individually to try to save the batch. I was super disappointed that these didnโ€™t turn out.

    1. Most likely it was your baking powder not being fresh enough.I store mine in the fridge but have noticed if stored longer than 3 months and it doesn’t work as well.

  12. These were VERY delicious and we all loved them!! But Iโ€™m finding most online keto recipes only show net carbs. And this recipe is a bit deceiving. The top of the articles says 2 net carbs. The bottom, when giving nutrient facts, says 4 carbs which makes you think 4 carbs total. These are almost 20 carbs total per serving which is ONE roll! For someone who has to be very strict with my carb count, I sure wish we had more clarity on the real amount of carbs per serving. Iโ€™m afraid I totally threw my body out of ketosis over ONE cinnamon roll! Itโ€™s important to tell all the facts for people with health issues for sure!

    1. Total carbs for one roll is 4, not 20. I don’t know how you are getting 20 but the total carbs is 4.

    Late in rating but I made these for Christmas morning this year and hubby and I loved them!! Yes, you can tell they’re fathead dough reimagined into sweet cinnamon rolls but after 5+ years of keto they are darn near perfect! I added the cinnamon mixture and then sliced into strips and rolled and had no trouble at all. If they start to cool off, briefly warm it back up to make it pliable and keep going. Love the new food processor method, too!

    Made fathead dough cinnamon rolls today. I had been so looking forward to trying them and am so disappointed. Followed the recipe with the new method. The dough crumbled when I tried to roll it so my rolls looked sloppy. They didnโ€™t rise one bit, and yes, my baking powder is new. Tastes ok but I have yet to find a confectioners sugar substitute that doesnโ€™t taste bitter. Tried swerve and Lokanto. Both not great. I need powdered maltitol but canโ€™t find it. I think I will try the cinnamon roll muffins instead next time. BTW, I also tried fathead pizza dough, came out very dry and hard. Not sure whatโ€™s wrong but so far, Iโ€™m not impressed with fathead dough.

    The rolls turned out so good, however, think the next time I will use Swerve Confectioners sweetener in the icing. There will definitely be a next time!!!

  16. This is phenomenal: Iโ€™ve tried about 3 different recipes previously: this one is the best by far. I donโ€™t like coconut flour: loved it in these rolls! They just came out the oven and my husband could not stop eating. The butter makes a huge difference as well. ๐Ÿ˜

  17. I’m not a huge fan of fathead dough because it never turns out for me. I made these 5 minutes ago and although they taste good the dough is still doughy? what did I do wrong?
