Tender Keto Salisbury Steak with Onion gravy served over creamy mashed cauliflower is a low carb comfort meal any night of the week!
Salisbury Steak
Salisbury steak is an easy ground beef patty, similar to a hamburger steak, but closer to a meatloaf, in that it usually includes bread crumbs, onions and eggs. It is always served with a brown gravy and topped over mashed potatoes. To make a low carb Salisbury steak, we just need to swap out the filling ingredients for the patty as well as the gravy to make it keto friendly. This is served over a fantastic, creamy mashed cauliflower that my whole family, even the kids, love! What is Glucomannan Powder?
You'll notice for my gravy I opted to use glucomannan powder. If it's an unfamiliar ingredient to you, let me explain why it's such a great option for a warm, thick keto gravy. Glucomannan is a natural, water soluble, dietary fiber made from the root of the konjac plant. This fiber is the same ingredient used to make Miracle noodles or Shiritayaki noodles. It's been used for a very long time in Japanese cooking as a thickener. Before I discovered it, I was using xanthan gum as a thickener for my gravy, but it gets somewhat goopy and a bit to gel-like. Once I made the switch to glucomannan for gravy, I will never go back! It's definitely a must in my keto kitchen!
Tools to Make Low Carb Salisbury Steak
Large Bowl- Glass bowls in different sizes are helpful in the kitchen as well as using them as a double boiler to melt chocolate or even for use in the microwave.
Baking Sheet Pan- Love the different sizes of sheet pans for all my recipes, whether savory or sweet!
Large Skillet- I'd rather use cast iron than non stick pans as they can leech chemicals into your food.

Keto Salisbury Steak with Onion Gravy
Ingredients
- 2 pounds ground beef
- 1 egg beaten
- ½ cup pork rinds finely ground
- ¼ cup fresh parsley
- ¼ cup heavy cream
- 2 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 tablespoon dried onion flakes
- 1 teaspoon salt
- ¼ teaspoon pepper
Onion Gravy
- 2 tablespoon avocado oil
- 1 tablespoon butter
- 1 cup onion sliced
- 2 tablespoon Worcestershire sauce
- 2 cups beef bone broth
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon glucomannan powder
Instructions
Make the Steaks
- Preheat the oven to 400 degrees.
- Combine all the steak ingredients in a bowl and mix to combine. Form into 6 large patties and place on a baking sheet pan.
- Bake for 20 minutes.
Make the Gravy
- Place the avocado oil and butter in a medium sized skillet and heat over medium heat.
- Add the sliced onions and cook until soft and slightly browned.
- Pour in the Worcestershire sauce and bone broth and bring to a simmer. Add salt and pepper then taste and adjust if needed.
- Sprinkle in Glucomannan powder and continue to simmer on low heat and stir until gravy thickens, about 5 minutes. If it's not thick enough for your liking, simply sprinkle in another ¼ teaspoon and allow to simmer on low until it thickens.
- Serve gravy over each steak on top of mashed cauliflower if desired.

Any suggestions on what to use instead of pork rinds? I am turning green just thinking about them and definitely can't eat them.

you really can't taste them at all, but maybe swap with almond flour though I've not tested that.
