Summer is here and that means kids are home and want all the things! These easy strawberry fudge pops are the perfect snack for kids and adults! The kids won't even care they're low carb and keto, all they'll taste is deliciousness! With just a few simple ingredients you probably already have in your ketogenic pantry, this recipe comes together quickly and easily. No one will be complaining when it's hot outside and you hand them these creamy fudge pops!
Dairy Free Pops
While not everyone needs to be dairy free, you can still enjoy these even if you're a lover of dairy. The creamy coconut milk makes for a decadent popsicle and if your not a fan of coconut flavor, no worries as the chocolate added and the strawberries are really the prominent taste flavors in these dairy free fudge pops. You could also just swap out the coconut milk with heavy cream if you prefer or even almond milk if you'd rather.
Strawberries not your favorite? Simple swap with some other fresh berries you like. Blueberries, raspberries or blackberries would still be just as delicious! Here is the Popsicle mold I love to use for all my frozen pop recipes.

Keto Strawberry Fudge Pops
Ingredients
- 1 can full-fat coconut milk
- ⅓ cup cacao powder
- ¼ cup Swerve confectioners plus 2 tablespoons
- ¼ cup cacao butter
- 1 ounce unsweetened baking chocolate melted
- pinch salt
- 6 large fresh strawberries diced
Instructions
- Place the coconut milk, cacao powder, erythritol, cacao butter, and unsweetened chocolate in a small pot over low heat. Stirring frequently, bring to a simmer until all of the ingredients are melted together.
- Divide the diced strawberries between 10 popsicle molds.
- Divide the chocolate mixture between the 10 molds, place the lid on the mold and insert popsicles sticks.
- Carefully transfer to the freezer and freeze until solid, at least 3 hours.

I just made this recipe almost to a T. I added scorpion pepper sauce to the spicy miso paste for some serious heat. It’s fabulous! The notes for the recipe are right on the money! The egg was perfect (I’ve never made a soft boiled egg but I love them so much)! I also used dried mushrooms and low sodium veggie stock. I live in Japan and this was better than any I’ve had here. I’m hooked.
