What is Cloud Bread?
Cloud bread, also known as Oopsie Bread, is a low carb bread made with just a few ingredients. It’s high protein, gluten free, low carb, low calorie, and keto friendly, making it a great option for those with dietary restrictions.
This bread dates back to the 1970’s when the Atkins diet was introduced. The texture is light and airy, resembling more of a meringue like texture. I tried the orginial version using cream cheese and felt it just stuck to the roof of my mouth and was not appealing at all.
I adapted my own version and turned the cloud bread into a loaf with much better taste and texture.
I've got some newer, higher protein versions of this bread now!

I knew it had to happen. As soon as the hubby had tried a slice of my new keto bread recipe he immediately said, "make some French Toast please!!"
So I did. And he was right. Most awesome Low Carb French Toast. EVER!
The Best Tips for Cloud Bread French Toast
Melts in your mouth. Every bite is worth savoring. Light. Airy. Fluffy. With a little crust on the edges. Perfectly perfect, at least to me anyway, and hopefully to you as well! You can even slice these in half and call them French Toast Sticks which my little guy wanted.
No forks required and just the right size for little fingers to hold and dip!
You don't have to use the low carb sweetener, but I do feel it needs some sweetness to make it taste authentic for a French Toast.
For those needing dairy-free, use this Dairy Free Cloud Bread Loaf will need to be adjusted since it contains sour cream.
PLEASE NOTE: The recipe for the original Cloud Bread Loaf is for savory which has onion and garlic powders in it. Please eliminate for this sweet recipe, adding in some ground cinnamon and vanilla extract to the loaf instead.
How to Make Cloud Bread French Toast
Ingredients
Very simple ingredients needed to make cloud bread French Toast. You must first decide which Cloud Bread Loaf recipe you wish to make. Do you want the on that uses dairy cloud bread loaf recipe or do you want the newest version which is dairy free Cloud Bread?
Once you've made your cloud bread loaf, you can then make this French Toast recipe. You need eggs, cream, cinnamon, low carb sweetener and salt.
Directions
In a shallow bowl whisk the eggs, cream, low carb sweetener, cinnamon, vanilla extract and a pinch of salt together. I used granulate Allulose but you can also use Swerve or another low carb sweetener you like. Here's my Sweetener Guide & Conversion Chart.
Place one or two pieces of loaf bread and let soak a minute before flipping over to other side.
Heat butter on medium high heat and once it is melted add the soaked French Toast slices as many as you can fit into your skillet. I was able to do two patches, 4 slices at a time.
Toast on each side for a few minutes until golden brown. Enjoy warm topped with some sugar free maple syrup, fresh raspberries and even some sugar free whipped cream if you like!

Cloud Bread Variations

Low Carb Cloud Bread French Toast
Ingredients
- 8 slices Cottage Cheese Cloud Bread or try my new Cinnamon Swirl bread
- 2 eggs
- ¼ cup heavy cream
- ¼ cup Monk Fruit Allulose sweetener or another sugar-free granulated sweetener you prefer
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- pinch salt
- 2 tablespoon butter

Bought your recipe book and this was the first thing I made. It turned out good on the top but was nothing but baked egg on the bottom, very disappointed. I followed the recipe to a T and I do
know how to fold eggs have been baking since I was 9 and am now 73. Maybe it's the high altitude, I don't know but, haven't had anything like this happen before.

For me it came out a little soft and difficult to work with but it still served the purpose. I made it again a few days later but realized too late that I did not have sour cream. I used 6 oz. softened cream cheese instead and it turned out sturdier and more bread-like which suited me better. The sweet version is great with sautéed cinnamon apples. The savory version I tried with Everything Bagel Seasoning and that was also great. Will definitely make again-- with cream cheese!

I made these this morning and I can't believe how good they are! I actually made the loaf yesterday and cut the slices this morning for the French Toast. I cannot tell the difference between these and French Toast made with regular bread. I used a Keto Maple Syrup I made last week and topped it off with a spritz of Whip Cream. Yummy! Yes I've frozen slices of cloud bread individually layered between parchment paper so you can easily remove one when you want it.

This is a winner! I made this yesterday. I typically do not like French Toast because it ends up soggy in the middle but this did not. I doubled the recipe and used all 12 slices. I have some egg mixture left over and plan to make another loaf of bread today to use it up. My hubby loves French Toast and he approved of this as well and I can serve it to him guilt free! Made this for my diabetic husband for breakfast this morning. It was delicious, very filling and surprisingly close to the Texas toast version. I added 1/4 TBS of monk fruit sweetener in the batter dip and for syrup I used some drizzled honey that was premixed with maple extract. I know this changes the carb count but I'm more paleo so for me that's fine. Enjoy!!

I'm not sure what onion powder or garlic powder you are using because I can definetly taste mine. Otherwise great recipe, next time I make my loaf I'll make it without the savory spices.

Jenn, it says right in the directions that the cloud bread recipe is savory and, for this recipe, to replace the onion & garlic with cinnamon & vanilla.
