Low Carb Peanut Butter Swirl Frozen Yogurt
A peanut butter lovers dream in each creamy bite or ....lick! This is by far the creamiest homemade frozen yogurt I've made yet on my blog! Why is this one the creamiest? I used 2% Greek yogurt as opposed to nonfat. Yep and it works! And it's still low in carbs, low in natural sugars and down right CREAMY!
If you're a soft serve fan this will win you over to making it at home and making it without added sugar. It really doesn't get any better. 🙂
Totally scoop-a-able! If you're not a fan of soft serve than just follow the recipe and refreeze until it hardens to your liking, 3 hours or overnight.
This ice cream scooper is the BOMB! The heat from your hand holding it, which has something inside I have no idea what it is, but it causes the ice cream to defrost a bit to make it easier to scoop.

It does melt quickly after removing from the ice cream machine and stirring in more peanut butter for the swirl effect so enjoy or refreeze! I love mine soft and smooth!

- Low Carb Coffee Ice Cream (egg free)
- Watermelon Frozen Yogurt
- Light Berry Frozen Yogurt
- Dairy Free Pina Colada ice Cream
A Few Notes:
- You could use a lower fat yogurt, but the mixture will not produce a creamy texture.
- If you're not a fan of bananas, you could eliminate but may need to add extra sweetener to the mixture.
- You can substitute the stevia with another sweetener of your choice. The amount used here is equal to about a cup of sugar.
- Nutrition Info is not including pb swirl on top.
Low Carb Peanut Butter Swirl Frozen Yogurt {No Sugar Added}
Ingredients
- 2 cups plain Greek yogurt 2%
- ½ cup milk of choice I used 1%
- ½ cup peanut butter no sugar added
- 1 banana mashed
- 1 teaspoon vanilla extract
- 1 teaspoon vanilla liquid stevia
- 2 tablespoons powdered stevia
- ¼ teaspoon salt
- Optional for the Swirl effect: 2 extra tablespoons peanut butter
Instructions
- Blend all ingredients together (except optional peanut butter for swirling), in a stand mixer or blender.
- Pour mixture into an ice cream machine.
- Follow manufacturers directions of your machine.
- Once done stir in the optional peanut butter or top onto each serving.
- Enjoy immediately as soft serve or freeze in a shallow airtight container for 2-3 hours until hardened.
- Allow to defrost for a few minutes on counter in order to scoop easily.
- If frozen overnight, allow to thaw for 30 minutes on counter to scoop easily.

This was very good & yes it had a wonderful creamy texture, by far the easiest & took only about 20 mins in my icecream maker (gotta love the rocksalt). It did have a banana PB taste but we liked that combo, but I am going to make it again tonight without the banana (I'm afraid I am now hooked) Thank you so much for the recipe!

Ladies and Gents... Please educate yourselves and know that fat does not make you fat nor is it bad for you. It is the carbs and calories that do that. Everything in moderation, but know that dietary fat is not a villain. Please read Dr. Atkins from the 70s and more. His work has been proven true many times over now. Now that I have that off my chest, I spent the summer in Indiana and bought groceries at a Kroger store. Great store! Anyway, they had "Carb Master" yogurt that I can't find here in Florida. Since I am sure that it is manufactured for Kroger, I wonder who makes it for them? Anyone?

Curious as to why you use both liquid smd powder stevia?

I feel both together helps eliminate any aftertaste from the stevia, especially if the recipe is a no bake type recipe. I never notice an aftertaste maybe because I've been using it for so long, but others on my blog have mentioned they do so usually and it's always with the powdered stevia that is the problem.

Have you tried making this with Carbmaster Vanilla milk? It only has 3 grams of sugar, 0 fat and 11 grams of protein. I'm just wondering if it would work. Sometimes when it calls for cooking something you cannot make the substitution.

I don't have any liquid arrival. Can I substitute it will the same amount of dry? Or maybe make some by adding something to the dry? Does it make a difference?

I think you could just use the dry stevia powder, may need more than the liquid. Just start with a small amount then taste it and adjust.

Quick question...can you use regular yogurt? I am asking because after about 4 weeks of trying green yogurt off and on and doing some experiments because I kept getting horrible stomach pains I found that I cannot eat Greek yogurt. At my last visit to the Dr they shed some light on why...I am allergic to the penicillin family of antibiotics and a few others. They said that many people with antibiotic allergies are often allergic to Greek yogurt. Sadly I had to cut it out of my diet, but J do feel much better now. Luckily I told a few loved ones about this and if cleared up some unexplained issues for them too! Of course so many recipes I want to try these days use Greek yogurt so I was wondering if they are interchangeable. thanks!

I used the Greek only becuase it is so very thick in texture but you could try regular yogurt but not sure how it will come out as I haven't tried it.

If you want it to not freeze so solid you cannot scoop it, add just a tablespoon of vodka to it, it will keep it soft.

Quick question! Does this have a really strong banana flavor or is it subtle? I have some non-banana fans in my house, but I thought if it was subtle, I could pull the wool over their eyes 😉 This recipe looks delish!!!!!!

You might even be able to leave it out but I like the sweetness it adds. You could also leave it out and add more sweetener of choice. There is only a slight hint of banana flavor, definitely more PB!

I love your recipes, but some of them seem high in fat. I see 11g and fat and automatically cringe. Clearly this isn't a bad thing as it's only 5WW points per serving, but can you explain why this is a better choice than lowfat or nonfat frozen yogurt? I treated myself to some yesterday (at a place called Menchie's) and it was only 90 calories (and nonfat) for a four ounce serving. I hope this post does not come off as rude or condescending, because I'm truly just trying to educate myself (and feel that you are a good person to ask this question to). Thank you for all of your amazing recipes!

I have no problem with you asking that question. My goal on my blog is not necessarily low fat recipes. My main goal in my life is the removal of refined sugars and flours but I do try to make recipes low carb, gluten free, sometimes low fat. I have a Light Berry Frozen yogurt that is only 3 grams of fat and a Dairy Free Pina Colada ice Cream that is 4 grams of fat. The fat in Peanut butter is a good fat as well as the fat in coconut milk which are products I use. Many of the low fat products you can purchase already prepared are often loaded with hidden sugars so I'd rather make my own at home even if I can't get the lowest calories for a recipe.

Kirsten I may be able to shed a very small amount of light on your question. I had to do a rather lengthy research project and paper my first two years in school on the molecular structure and absorption of good fats within mammals, more specifically humans. After the study was done and I had read countless molecular biology and nutrition peer reviewed journals I finally am of the opinion that "good" fats in moderation are actually quite good for you and help you lose weight. Coconut oil, avocado, nuts, olive oil (not heated or exposed to prolonged light), flax and certain fish oils all play an essential role in weight loss. Notice I use the word moderation here. I'm not saying to eat 2 avocados a day and 1 cup of nuts. That would be way too much. It is important, however, to remember that weight loss is very much a biological process and rooted in the interaction of some very basic, fundamental molecules. When one combines strength resistance training, some cardio and a healthy balanced diet which entails "good" fats in moderation, one will absolutely lose weight. My online trainer always tells me I should try to incorporate at least 1 serving of a good fat everyday and it has worked for me in that I lost quite a bit of weight.
