Keto White Chocolate Fudge made low carb, sugar free and dairy free!
White Chocolate Fudge
White snow. Pretty, soft, clean.
I've been longing to see it yet it hasn't appeared this winter here in New England. We will get it soon enough I'm sure. When I haven't seen snow since last winter I miss it and can not wait to have it return just in time for a white Christmas.
Though as soon as the holidays are over and the New Year has begun I'm all set with it and wish it would go away. Unfortunately that doesn't happen until around March sometimes.
So I guess you could say this recipe came from the desire to see something beautifully white and clean. How did I end up with fudge? I've always wanted to work on a sugar free white chocolate fudge recipe. And recently I made a white chocolate candy bar that also had been on my foodie to do list for some time.
Low Carb White Chocolate
Making white chocolate sugar free was not easy and I attempted it quite a few times with failures before getting it just right. The same experience has resulted with this fudge. Using cacao butter can be difficult, at least for me it's been a challenge. Add something it doesn't like once melted and you've got an oily, uncooperative mess on your hands.
I've had to change around the amounts of coconut butter and cacao butter since my youngest really dislikes the flavor of coconut. The emphasis here is the white chocolate flavor and less coconut. So even if your not a fan of coconut like my little man you won't notice it much at all. The creamy, irresistibly soft texture will win you over in one bite!
The third time I made it I thought it just melted in your mouth so beautifully that maybe the texture should be firmer. I remember exactly what my oldest teen said, "MOM stop! This is Perfect!"
The picky hubby was won over as well. He's pretty vocal about aftertastes and makes sure to let me know if he notices anything he doesn't like in my desserts. With this, he made sure to tell me there was no aftertaste with the stevia at all. Hallelujah!

Low Carb White Chocolate Fudge
Low Carb White Chocolate Coconut Fudge (paleo, keto)
Ingredients
- 4 ounces cacao butter
- 15 ounces coconut milk
- ½ cup coconut oil
- 1 cup coconut butter
- ½ cup vanilla whey protein powder Jay Robbs brand
- 1 teaspoon vanilla extract
- 1 teaspoon coconut liquid stevia or vanilla stevia
- pinch salt
- Optional topping: unsweetened coconut flakes
Instructions
- Melt the cacao butter in a sauce pan over low heat.
- Stir in the coconut milk, coconut oil and coconut butter.
- Continue to stir until completely smooth, no lumps.
- Turn off heat and whisk is protein powder, vanilla extract , stevia and salt.
- Pour mixture into a parchment lined 8 by 8 pan.
- Sprinkle with coconut flakes if desired.
- Refrigerate 4 hours or overnight.
- Does not need to be kept refrigerated for storage.
Notes
- This recipe was first published in December of 2014 and updated with video in Dec.2018.
- I would not change a thing to this recipe. I would not substitute this recipe in any way. Why? Because it is absolutely perfect as it is. The only one thing I will say is, if you don't have coconut liquid stevia then use vanilla liquid stevia or plain. I would not use powdered. I would not use Swerve here. This fudge is so completely smooth it melts in you mouth.
- These can stay on the counter and will not get too soft. They were perfect. I've even frozen them and thawed them and they were still perfect.

I'm sorry I've only tested the recipe with Jay Robbs vanilla protein powder, however most whey protein powders could be used here.

You could certainly use Lakanto but I've not tested it for this recipe so I would be guessing on an amount to use, possibly just 1/2 cup would be all you need.

This recipe turned out way too soft...almost like divinity...I bought all organic ingredients but did not substitute a thing. Disappointed with the softness, but the flavor is fantastic. I am not a big fan of stevia as it has a nasty after taste, and I can taste it in this recipe, but everyone that has tasted the batch I made, absolutely loves this recipe. Thanks for sharing.

The texture of this is MAGICAL. I like the texture of this better than the texture of regular fudge. I didn't have vanilla protein powder--only unflavored--and maybe for that reason wasn't 1000% in love with the flavor. I'm going to keep trying to tweak the flavor to something I also adore because WOW, the texture. For a good bit of this batch I took a piece and rolled it in oily salted peanuts--yuuuuuuuuum. Do you have a chocolate version of this? I'm wanting to make exactly this, but chocolate. I'll use baking chocolate, cocoa paste, and maybe some Dutch cocoa powder, I just don't want it rock hard, hard would be great, but not rocks. I'd love to come up with an old fashioned hard fudge, but healthy like this! I'm wanting to use stevia, or swerve. I've got a really good stevia NO after taste, the other sugar alcohols are hard to melt in chocolate bars, but they might work in this. Any ideas? Love this recipe I can tell from the ingredients it will be great!

I got SO EXCITED when I saw the words "white chocolate"!!! LOL I am only ho-hum about regular chocolate but I am passionately in love with white chocolate and see so few recipes for it. Thank you for this one! My biggest problem with keto recipes is that nearly all of them call for the use of Stevia and I am terribly allergic to it. My reaction is just AWFUL! And it last for days too. GAH! I also have gallstones, which makes getting the requisite amount of fat into me really difficult since it I have a hard time processing fat, so I rely more heavily on protein. This recipe is wonderful but would it be alright to substitute something else for the Stevia? What would you recommend? And how much to put in? I am drooling over ALL your recipes and saving them to a special file. I will definitely be getting your book!!!

I also like Swerve sweetener. For this recipe I think you might need at least 3/4 cup, but you can start with 1/2 cup, taste it and decide if you need more. Thank you!

I wanted to make this for weeks since I saw this on Pinterest and ordered the cacao butter in readiness as that was the only thing I was missing. But, in the middle of making this yummy treat, I found I had no protein whey powder so I substituted ground almond meal instead (ground by my own fair hands....or by my nutribullet!) and I topped with toasted almond flakes.. OMG they taste soooo amazing!! The only thing was I couldn't get mine to look as pretty as yours when cutting into squares so they are a bit uneven and rustic looking, but still absolutely delish .. thanks for this amazing recipe. I'll try it with the vanilla protein powder - just ordered from Amazon with some more cacao butter!

This fudge is lovely, but it came out rather soft for me. It was delicious though. I may cut back on the coconut milk next time I make it. It is great to have a fudge alternative as I'm diabetic. Thank you for this website; it's a life saver.

I really wanted to like this. But it tastes just like coconut that's it. The texture is nice but unless you Love I mean Love coconut you will not like this. Its a waste of expensive cacao butter because you cant taste it at all. Not sure if its the coconut milk that is so overwhelming or the coconut oil or what. I eat homemade coconut butter all the time and its much less coconutty than this. Maybe taking out the coconut milk for regular milk if your not dairy free? And if I use coconut oil that doesnt have the coconut flavor it will taste better. Noone in my family will even eat it but me and I will eat it so it doesnt go in the trash. Any suggestions would be great. I was looking for something for my husband to replace his white chocolate.

Sorry you feel that way about it. My little guy hates all things coconut and loves this as does my other kids and hubby. I don't feel it tastes as much coconut as you describe. I think maybe using unsweetened almond milk in place of the coconut milk might decrease the coconut flavor.If you did use coconut liquid stevia to sweeten I would say try just the vanilla flavored liquid stevia instead.

Use the same amount of liquid stevia as I have and then add 1/2 tsp coconut extract.

I wanted to love this recipe, and all the ingredients are things I like with the exception of stevia. I made the recipe with no substitutions and the texture is fabulous but stevia just nukes my taste buds and I couldn't eat this dessert. So, if you dislike the taste of stevia just a note that the rest of the ingredients will not compensate for that. I will remake at a later date with a different sugar substitute (might sacrifice on texture a little?). Thank-you Brenda for your experimenting and creating sugar free and low carb recipes, I especially like your chicken and veggie recipes.

You are so right. Bought Raw cacao just to make this recipe and it is expensive and this recipe is pretty bad, I threw it away. What a waste of my money and time. Pic looks good and so I wanted to love it or at least I hoped it would be eatable. 🙁

How about liquid monk fruit extract? That’s what I usually use, because like you, I can’t stand the stevia aftertaste.
