Mason Jar Tuscan Bean Spinach Salad

Mason Jars salads are the most practical way to enjoy a healthy salad anywhere!

Grab and Go is the Motto for when autumn comes back around with the children in school and life not as relaxed as in the summer season.

In the Back to School season of life, I need all the help I can get as a busy momma of 3 children. Often though I’m so consumed with their schedules, activities and healthy lunches I neglect my own.

The best way I beat the stress of not forgetting to eat or eating the left overs off my kids plates is to have a healthy option that I can make it ahead. My philosophy is to make it once, but enjoy it twice, which means less time in the kitchen to prep myself a good option for lunch every day.

When I was invited to participate in creating a healthy focused recipe using a Kraft dressing of choice,I knew exactly what I would make that helps me GRAB-N-GO when needed and that is the Mason Jar Salad!

Making a salad used to be a real pain causing me to NOT want to take one to go, ever! Having to include dressing separately it inevitably always leaked no matter how well I contained it. But then I discovered the love of the mason jar.

If you’re new to trying a salad in a mason jar, this will rock your world! The dressing will never spill nor sog your salad before you can indulge. It’s layered in such a way that the dressing and all ingredients will be perfectly crisp as the day you packaged them into the jar, up to 4 days!

This Tuscan salad idea complements the Kraft Tuscan salad dressing perfectly. Since I had beautiful tomatoes from my garden, I chose fresh, but this salad can easily be made in any season even when tomatoes are ripe or at their peak. Sub the fresh for sun dried tomatoes and your good to go any time of year!

When you’re ready to enjoy your salad, just shake up the mason jar as vigorously as you can and pour it onto a plate or bowl and enjoy as everyone around you will be envious of your healthy beautiful salad!

Mason Jar Tuscan Bean Spinach Salad

Ingredients

  • 1/4 cup Kraft Tuscan Dressing
  • 1/2 cup diced cucumbers
  • 1/2 cup cherry tomatoes halved
  • 1 cup cannelini beans rinsed, drained
  • 2 tablespoons kalamata olives drained
  • 2 ounces Romano cheese chopped
  • 2 cups fresh baby spinach

Instructions

  • In the order given above, divide each ingredient into 2 mason jars.
  • Layer one item on top of the next.
  • Seal and refrigerate overnight.
  • When ready to serve, shake jar vigorously to distribute dressing.
  • Pour onto a plate or bowl and enjoy!

Notes

You can certainly sub sun-dried tomatoes for the fresh tomatoes if they aren't in season.

  2. I am the same way! I always find myself skipping lunch due to everything going on around me. I love the mason jar salad idea, but have yet to try it. I love everything in here, and the dressing sounds great, so this would be a great place for me to start!
