Overnight Banana Steel Cut oats is the crock pot rocks!
The crock pot or maybe you call it the slow cooker, whichever name you use, is by far the best invention ever created for a busy family don't you think?!
I've made Overnight Apple Oatmeal [using honey] and Sugar Free Crock Pot Oatmeal, but basically hadn't ventured into STEEL CUT OAT world.
Mostly because I know my family and the oldest, pickiest child as well as the youngest child who has some food texture issues since he was born, hates all things oatmeal except my Personal Sized Baked Oatmeal with Individual Toppings.
So when I attempted the overnight steel cut oats and gave some to my hubby, the oldest by my surprise asked for some, HA! I was shocked when he ate the entire bowl. Call it a miracle, but I have no idea the big difference really, but by GOLLY I shall make it again and I did. The first time it was dryer than I preferred so I increased the liquid and the recipe is perfect.
The banana is optional, but for me it adds a sweetness and I need very little sweetener. You can leave it out if you like without problem. Add whatever fruit and sweetener you like.
Mine looks even worse because I believe, no evidence though, that the hubby awoke before I did, started to stir, stopped, realized I may want a picture and recovered it! But the next pic shows , ALL is WELL anyway!
See, it is just fine!
YUMMO!
The banana can be eliminated if your allergic or simply don't like banana!

- 1 cup steel cut oats
- 3 cups water
- 1 tablespoon butter
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 banana, mashed
- nonstick cooking spray
- Spray the inside of your slow cooker then add all other ingredients, including mashed banana if using.
- Cook on low for 8 hours.
- It will look like a brown mess because of the cinnamon, don't worry! Mix well and add your favorite fruit on top if you like and sweeteners if you need it.

What are steel cut oats, please? Haven't seen these labeled such in Australia. Is it just oats that aren't the quick cooking ones, so they're bigger & thicker?
Michelle
Hi 🙂 making this tonight I have a 6 quart crock pot do u think I should let this sit all night on warm? I'm afraid it will burn.

Okay confused can i or do i add apples, bananas, and berries to the crockpot all together to cook? does it freeze well?
Brenda
I added the bananas and in my other recipe the apples prior to cooking, yes all together. I've never frozen it so I can't say.
jen
Yes I freeze it, I did it with the pumpkin recipe I am going to make banana this morning. Pumpkin I used milk in mine instead of water, you can use almond milk as well. I also am going to do apple juice/cider in the apple one, maybe juice and water so its not too sweet next time I make the apple recipe. I freeze them in large muffin pans (spay with pam first) then put hot water in sink dip bottom of muffin tin in water to loosen oatmeal from pan. Then pop into zip lock bags in freezer, easy breakfast.

I was just looking at your apple slow cooker oatmeal and was wondering why you use water in this recipe and milk in the other...I have both types of oats and was just curious as to which one might be more child approved lol
Brenda
Not much difference in taste. The kids like either, just a little less creamy I would say. I think I might have been put of milk at the time and tried it with water so since it was still good that's how I posted it, LOL! Less calories as well using water but either way is fine.
Heather
I made this overnight last night. When I woke up it was mostly burnt. What did I do wrong? Any help would be appreciated. Thanks!
Heather
Brenda
What size crock pot did you use? If it is larger than a 4 quart you should double or triple the recipe.

I've just started a web page to detail my trials and tribulations in dealing with diabetes. Since I hate to cook, I am looking for crockpot recipes fit for a diabetic. I think this will be perfect. Thanks for the recipe.

I love steel-cut oats, but they take too long to make in the morning. This is a great idea. Now I just need to find my small crock pot hidden away somewhere in the basement! 😉
Christina (Sisters Running the Kitchen)
going to make this tonight...do yo think I could use 2 bananas or would that make it dry?
Brenda
no I think it will be fine using 2 bananas
Kimberly
Have you tried your overnight apple oatmeal recipe with steel cut oats? Can you use milk with the steel cut oats? I've tried both recipes and love them both but would prefer the apple one with steel cut oats. Thank you for sharing. 🙂
Brenda
you can certainly use milk instead of water

Every recipe that I tried of yours becomes a keeper. What a great way to wake up in the morning. I drizzled honey on it and it was wonderful! I quit making oatmeal because it took too long to make in the morning. And now I can have it ready for me in the morning when I wake up. Thanks for the recipe.
Jen
I came on your blog to see if you have a version of pumpkin oatmeal, like this one my friend forwarded me today... cause I would love to make it in the crock pot as I have your "overnight oatmeal"... so I'm wondering, if you think pumpkin would replace banana very well in this recipe.

I use the rice cooker and love how fast is done!
My daughter wakes up and goes straight to the R.C and it gets done when she is ready to eat

I made this last night and OMG, it was so good. Whenever I made steel cut oats in the C/P before, they turned out bland and dry, these however are so scrumptious, I think the trick is the mashed banana and tbsp of butter. I really enjoyed this, so much so that I ate 2 big bowls of it. I did add some walnuts to my oatmeal before serving and a couple of spoons of molasses. It was delish and I will keep this recipe for future use!

Wow, thanks! I will try this. It used to take 1 & a half hours to make hubby's steel cut oatmeal on the stove ( He does it, lol! And he makes enough for a week. When it's cool, he packs 'em to heat at work. It freezes well, too)
Kelli
I'm assuming you did not use quick cook oats? Also, what size crockpot did you use?
Shannon
I am so impressed that your husband not only stirred the oats but also thought about you needing photos and stopped! What a guy!
The recipe sounds great too!!! What are steel cut oats?
Brenda
I love that he stopped stirring just because he thought I might need a pic prior to stirring, he's a great hubby! I've just used Trader Joe's Steel Cut Oats.
Hilary
Mmmm I'm going to have to try this. I make banana, peanut butter banana, and chocolate-peanut butter-banana oats in the morning with regular oats quite frequently but haven't ventured with the steel-cut... do you think it would work with peanut butter in the mixture overnight??
Brenda
I think its something I would need to experiment with only because the steel cut oats need a lot more liquid than regular. I would probably add more liquid if using cocoa and peanut butter.
kim
I JUST MADE THIS FOR THE AM for my son and i - i used thick cut rolled oats ?? think its going to work?
Brenda
I've never used Thick cut rolled oats but they should be fine.
LubbyGirl
This looks great - I found it through Eat At Home. I have to try this now, since I have steel cut oats crying to me from the pantry. I hate it when food is sad, so I will just go make it happy by bathing it in the slow cooker.
I have bananas in the freezer that I'd gotten on sale when they were very, very ripe. I'm sure those will work too. Thanks so much for sharing this recipe. I think I'll put it on pinterest too, for my other friends to try.
Brenda
Thanks!
Ashley
I got a little confused. Did you add the banana during the cooking or at the end? Thanks. I'm making this for the morning!
Brenda
Yes I added my mashed banana to cook with the oats for sweetness so I barely needed to add any sweetener at all in the morning.
Ashley
Thanks! I added mine after and used it as my sweetener. Works good then too!
alison
What size crock pot did you use?
Brenda
I used my smaller 2 quart crock for this one, but you could just double or triple the recipe to make in a standard size crock.
Brenda Barrett-Rhyno
I hope this turns out. I just made it and put it in my regular size slow cooker before reading down through all the comments so I never doubled the recipe or anything. Hoping it will be o.k as my daughter and I are looking forward to trying this in the morning!
Kelly Jones
Steel cut oats are also fabulously easy in a rice cooker! Just add double the amount of water as the oats and when the button clicks from cook to warm, unplug and they are done! Super easy and super yummy!
Brenda
cool, perfect for those without a crock pot!
Christine McGrew
What setting did you use..white rice or brown rice?
Michelle W.
My son has Fcat tomorrow, this will be perfect! Thanks!
Michelle Sexton
Yay! this looks great and I am going to make this TONIGHT!!! 🙂
Petra
I don't have a slowcooker but I might try and do something similar on the stove as I have a packet of steel cut oats at home!
