Pomegranate Sweet Potato Quinoa

Ingredients
- 2 cups chopped, peeled sweet potatoes
- 1 tablespoon canola oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 pomegranate seeds*
- 2 scallions
- 1 cup cooked quinoa*
- ¼ cup dried cranberries, no sugar added
Dressing
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- salt & pepper to taste

Directions
Preheat oven to 400 degrees. In a bowl mix olive oil and sweet potatoes together, lay on baking sheet. Season with salt and pepper. Bake for 30 minutes. In a serving bowl mix together pomegranate seeds, scallions, quinoa, dried cranberries and toss with dressing. Once sweet potatoes have baked and cooled add to the rest of the ingredients. Serves 2 or 4.

Where do you get the no sugar added dried cranberries? Everyone I pick up are full of sugar, like 26 grams....

Hi! I don't have an oven.. would this also workout if I cook the sweet potato?

sure, you could cook the sweet potato in the microwave, might be a bit more mushier but still will work.
