It's a typical New England kind of day today. Cold, rainy and a chance of snow tonight! The only day all week that I had to be out with the children since early this morning until dinner time. Yuck!
Having a busy, hectic day ahead and not having a plan for dinner is one of the biggest culprits for ditching your weight loss plans. I know, I've been there. I don't know about you, but with a family of 5 and one income, take out is not an option. As a mom who is trying to maintain a weight loss, mac and cheese and nuggets for the kiddies is not on my food plan either!
Being prepared for busy days and having something in the freezer already prepared or already cooked and just needing to be reheated is one of the BEST ways to combat those busy nights. Especially helpful to keep me away from eating what my kids might be eating.
Today was one of those type of days for me. I knew it would be a long day ahead and even the evening was filled with activity. I decided yesterday to take out of the freezer the chili I had made in the slow cooker about a week ago. I had made a huge amount of it for the exact reason of wanting left overs to freeze. Now chili is not a kid favorite in my house, but it is a favorite of my husband and myself. So they are having a kid meal and we are having some chili! Some nights are like that, but for the most part my kids eat what we eat.
This chili recipe is so delicious, satisfying and good for you. Perfect for a cold, rainy night and even more delicious knowing all I had to do was heat it up!!!

i love your site!!! I have several bags of Bob's Red Mill Green, Red, & Brown lentils i would love to try in this recipe. Have you ever tried it this way? Since the recipe calls for can measurements, do you know about how much to use? thanks!

Each can is about 15.5 ounces so that is about 2 cups each.

I was wondering what kind of tomatoes with seasonings you use? Recipe sounds great but it seems like an awfully long time to cook in the crock pot since all the ingredients are already cooked that you put into the crock. will be trying this soon! 🙂

This chili was THE BOMB! Even my fussy boys gobbled it down! Thanks so much for the recipe. I did put the tomatoes, salsa, and chili seasoning in my blender before adding it to the crockpot since the boys wouldn't have touched it if they had seen chunks of anything. LOL

This is on the menu for tomorrow night. Hmm - wonder if I could sub out some chicken breasts for the ground turkey?? I have done chicken in the crockpot before with salsa and black beans - it shreds up after it is cooked.

I did pick up a package of grass fed lean beef today - but will try this again with the chicken another time. I bet it would work great. I was asking because I got a great deal on hormone free range chicken and have a ton in my freezer! 🙂

Hi Brenda! Love the recipe - super simple. Only problem is we typically don't purchase salsa - I guess any kind could work? Maybe I'll try reworking the recipe w/ my homemade salsa. And I think we'd love more meat as well - either way! Thanks for sharing on FB today. I'll for sure link to you if I make it and post about it!
