These Sugar-Free Brownie Cake Pops are easier to make then you think and are actually much healthier being grain and gluten free, than typical cake pops around! Perfect for Valentines!
Make a child happy today and make one of these for them! No seriously, these are the biggest kid friendly treat around as they are easy to hold and eat! Making them with my Fudgey Flourless Brownie recipe and some sugar free healthy frosting to boot and no one will ever guess they are sugar, grain and gluten free! I promise and it's been tested out too with a bunch of cub scout kiddies! This is an easy Valentine's recipe to make and share and you can do it without a cake pop pan!

Even if I had a cake pop mold thingy I probably wouldn't have used it anyway. The brownies need to be cooked and crumbled and mixed with frosting. Rolling them is the easy part and getting your kids involved is the fun part!
I didn't have Styrofoam like other normal people who bake these kinds of things often. SO I improvised and used a dishwashing rack that was brand new of course and hey, not bad right?

We found these little bags specifically for cake pops at Joann Fabrics. We placed each cake pop into a mini cupcake liner as well to bring them to our cub scout Pine Wood Derby to donate. We only brought back 3 which made my 3 kiddies happy! My very picky teen chose my brownie pop over all the regular cupcake and other desserts there so that is truly a remarkable thing, especially for a picky teen!
So before you look at the nutrition info I want to point out that this is a special treat and certainly not a low fat or low calorie one and not intended to be. It is however intended to reduce the amount of sugar my kids consume and making them sugar free as well as grain and gluten free is a much better option that anything else out there. Just stating the facts friends. Slightly indulgent but worth it for Valentine's day or anytime you need a kid friendly treat for a party!
Notes on Substitutions:

I have found sugar free chocolate chips by the brand Lily's at whole Foods. Otherwise you could also use unsweetened carob chips or the highest cocoa content for a chocolate chip or baking chocolate you can find.
- If you don't have liquid stevia and only have packets you can use 4 packets or 2 teaspoons pure stevia extract.
- I haven't been able to find a healthy sugar free sprinkle anywhere so I used coconut sugar before the coating dried. If you find some, let me know!
- I have not tried subbing coconut oil for the butter in the recipe but I do think that would work just fine as well.

Sugar-Free Brownie Cake Pops {Grain & Gluten Free}
Ingredients
- 1 recipe Flourless Chocolate Brownies
Fudge Frosting
- ⅓ cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon liquid stevia
- 2 ounces unsweetened baking chocolate
- ¼ cup butter
- 1 tablespoon unsweetened cocoa powder
Chocolate Coating
- 1 ½ cups sugar free chocolate chips
- 1 tablespoon butter
- Optional sprinkle: coconut sugar
Instructions
- Make brownie recipe and allow to cool then crumble in a large bowl. Set aside.
- To make frosting, whip cream, vanilla extract and liquid stevia in a stand mixer until peaks form.
- In a sauce pan over low heat, melt baking chocolate and butter then whisk in cocoa powder until incorporated.
- Slowly blend into whipped cream.
- Stir chocolate frosting into crumbled brownie mixture until all combined.
- Form into balls on parchment lined baking sheet. Stick a lollipop stick into each and refrigerate for 30-60 minutes.
- Once hardened, melt dipping chocolate in the microwave at 30 second intervals until melted and stir until completely smooth.
- One at a time, dip into melted chocolate, tap slightly to remove excess chocolate then stand in Styrofoam or hang on a dish rack until set.
- Add sprinkles of coconut sugar before they set.
- Wrap individually for gift giving!

Hello! I made these last night and they are great!!! I used a Pillsbury Sugar Free brownie mix, substituted coconut oil for the butter, Stevia packets instead of liquid Stevia, and used Nestles’ sugar free chocolate chips. The coconut oil works very well. Al of which I found at Walmart! This is a great recipe! Thanks for sharing!!!

Wow these look fun! We just did some pops this week and I was looking for a good "chocolate coating".
I saw one pop with balls made of: coconut flour, soaked almonds, agave (which I don't use), & vanilla. Modified it to just 1/2 cup soaked almonds, 4 dates & vanilla & pulverized (so basically the almond date truffles all over the internet!). 75 calories before dipping (7 balls jus under an inch)...it actually turned out great but I needed a healthier coating 🙂 So thanks! There's also a coating I may try with coconut butter & vanilla 🙂
LOVED the improvisation to hold those pops up! great tips (so much better than me balancing in a cup so they don't tip).

I love the almond date truffle idea too but unfortunately my youngest is allergic to tree nuts and being it was a cub scout event with many kids allergic as well, they want no nuts at all. But that would be a healthier option! But to be honest no one even guessed they were my black bean brownies! Yes, the idea of the dish wash rack was just because I found it brand new on a shelf in my basement, worked perfectly!
