Sugar-Free Chocolate Peanut Butter Fudge Truffles are little bites so good you'll never notice they are sugar-free!
There's nothing better than making something at home that tastes just as amazing as a sugar filled treat, but without all the refined sugar.These little bites of heaven have less than .4 grams of sugar in them. This recipe is easily adapted to nut free by using sunbutter in place of the peanut butter. Making these at home doesn't require much time and provides a nice treat to bring to any holiday party coming up.
Using Lily's brand of sugar-free chocolate chips sweetened with stevia is the best choice here. I found them at Whole Foods market, but if you can't find them using unsweetened carob chips would also work. Another option is to use unsweetened baking chips and add more of your favorite sweetener of choice until the desired sweetness.
They melt the same as regular chocolate chips and taste just as good!
My boys who have peanut and tree nut allergies were especially happy when they were able to eat these yummy chocolate bites since I used sunbutter the second time I made them. Hubby and daughter enjoyed the first batch using peanut butter. I like both!
I would keep them refrigerated until you're ready to serve them as they will soften a bit when left out on the counter. Not an everyday treat but for special occasions and the holidays a great alternative to unhealthier choices don't you think?
In case you're wondering where I got this fabulous idea from, it was my grandma. Well actually I was browsing through her recipes for Christmas and came across her fudge buttons. It had butter, cocoa, confectioner sugar, milk and peanut butter, so I adapted from there. After on unsuccessful attempt the 2nd and 3rd were perfected! All thanks to my grandma!
Sugar-Free Chocolate Peanut Butter Fudge Truffles {Nut Free Option}
Ingredients
Truffles
- 2 tablespoons butter
- ¾ cup sugar-free chocolate chips
- ½ cup peanut butter unsweetened or sunbutter for nut free
- 2 droppers full chocolate stevia
- 2 tablespoons milk 1%
Chocolate Coating
- ½ cup sugar-free chocolate chips
- 1 tablespoon coconut oil
Instructions
- Fill a small saucepan with a small amount of water.
- Place a glass dish that will fit over the saucepan and does not touch the water.
- Place the butter, chocolate chips and peanut or sun butter into the glass dish and cook over medium heat.
- Stir until melted and combined well.
- Remove from heat and add stevia and milk.
- Stir until smooth.
- Refrigerate for 30 minutes.
- Using a ½ tablespoon scoop and roll into balls. Makes 28.
- Refrigerate again for 30 minutes.
- Melt chocolate chips with coconut oil and stir until smooth.
- Dip one truffle into chocolate and coat all over. Remove with a fork and place on a cooling rack.
- Decorate with shaved chocolate if desired or crushed peanuts.
- Keep refrigerated.
