Thereโ€™s  just something about chocolate that makes most people happy. Iโ€™m one of them! Anything chocolate and Iโ€™m in! Iโ€™m pretty much “a piece of dark chocolate a day” kind of girl, so this amazing bundt cake is what my dreams are made of! With a hint of espresso it takes that chocolate flavor  to another level. 

Using coconut flour is a fabulous way to make a keto, but nut free option for all those with nut allergies. My youngest has a tree nut allergy, so when a special keto cake like this is made nut free, and he can enjoy it with others, he’s happy and that makes me happy as mom. 

This beautiful cake was created by one of my fabulous recipe creators, Naomi Sherman. She is constantly impressing me with her creations for my website.  She’s created some amazing recipes like this Chicken Mushroom Casserole, Crispy Sesame Chicken Fingers, and this Creamy Chicken Thyme Soup!

Keto Chocolate Bundt Cake

Ingredients

Instructions

  • Chop the dark chocolate into small pieces and place in a heatproof bowl, along with the butter and the espresso.
  • Place the bowl over a pot of simmering water, being careful not to let the water touch the bowl, and let it warm through, stirring until the butter and chocolate are both melted, and all ingredients are combined.
  • Add the Sukrin Gold and the vanilla extract and stir until dissolved. Remove the bowl from the heat and beat in the eggs, one at a time.
  • Sift the coconut flour, cocoa and baking powder together into a small bowl and then add to the chocolate mixture. Stir briskly until combined with no lumps.
  • The mixture will look quite runny, but donโ€™t panic. Leave to sit in the bowl for 15 minutes.
  • Meanwhile, pre-heat the oven to 300ยฐ F. Grease and line a standard bundt cake tin and pour the batter in.
  • Bake for 60 minutes until just set in the center. Remove and allow to cool in the pan before turning out onto a cake rack and serving. Store in the refrigerator for up to 3 days.

  1. was wondering about the coffee part are you talking about 8 strong liquid coffee or 8oz of ground coffee sorry I don’t know much about coffee

  2. Would this work in a 4inch, 6 inch or 9 inch cake pan? Iโ€™d want to make it into a birthday cake. Please advise!

    1. It depends on how many layers you want. If you want to make a single layer use the 9 inch. If you want to make it with two layers use the 6 inch.

    1. I have the same question… Could you use a silcone bundt pan and skip the lining step? Or will the cake stick in that type of pan too?

  3. Drives me nuts when pan sizes are not given. Bundt pans come in a variety of sizes and recipes almost never say what size bundt pan. What size (caps batter capacity) bundt pan did you use?

  4. the recipe says grease and line a Bundt pan? I understand the grease but how do you line a Bundt pan?

    1. You’d have to cut pieces of parchment to fit along the sides and bottom.

    1. Right under the title of the recipe shows 8 servings so they are pretty good size pieces.

  5. Looks nice, thanks for the recipe!
    A question though regarding the coffee.. that is 8oz prepared liquid coffee, right? not 8oz of freeze-dried granulated coffee crystals?
    I have 3 kinds of coffee in my home, ground coffee but rarely use it, freeze-dried coffee crystals for guests, and espresso powder for me, how do you define STRONG?
    8 oz is roughly 236ml, so almost a full cup/mug, how many tea spoons of granules or espresso powder would you recommend for that? I normally just put 2 teaspoons of powder in a mug, add 2 tablespoons of white chocolate zero-cal syrup and add boiling water, can’t really quantify strength there..
