Since Father's day is just around the corner, creating a creamy keto peanut butter filling to stuff in the middle of these chocolate keto brownies, had to happen for my peanut butter loving hubby, who also now follows a keto diet. He gave this recipe thumbs up and asked when I'd be making them again!

Natural, no sugar added Peanut Butter is keto friendly and can be enjoyed on a ketogenic diet. As long as you have a small portion, only 1-2 tablespoons, you should be able to stay in ketosis.

When you are looking for the best sugar-free chocolate chips that can replace traditional chocolate chips in recipes you will first want to look at the label of ingredients.
Always check for what sugar alcohols are being used in the chocolate chips to make them sugar free. Stay away from any of the following sugar alcohols like Maltitol, and Sorbitol. Those sugar alcohols will give you digestive distress if you over consume the recommend serving amount.

I always make sure it doesn't have any added sugars and whether it actually contains some cocoa butter. You can also make your own homemade chocolate chips if you prefer.
Lily's Sweets is often the brand of sugar-free dark chocolate chips I use in most of my sugar free desserts, like in my Chewy Chocolate Chip Cookies.
They sweeten using erythritol and stevia and have many different kinds of sugar free chocolate chips, like semi-sweet, milk chocolate and even salted caramel, to name a few.
Another brand I found that uses Allulose in their chocolate chips is byGood Sam. I found them to be great, just not as sweet as using Lily's chocolate chips made with stevia.
You could use unsweetened chocolate in this recipe to replace the sugar free chocolate chips I used, but you would most certainly need to add much more sweetener to the recipe.

The best keto peanut butter is always the brand that just uses peanuts and salt, nothing else included. Some don't add any salt and that is fine too, but often so many brands add unnecessary oils and other ingredients, so be cautious.
Also if you look for an organic label, at least you will know for sure the peanuts haven't been sprayed with harmful pesticides.

How to Make Keto Peanut Butter Stuffed Brownies

Unsalted butter at room temperature
Room temperature eggs
Egg yolk
Heavy cream
Better Than Sugar Confectioners sweetener or choice sweetener
Perfect Keto Peanut Butter collagen or chocolate whey protein
Peanut butter no sugar added
Butter or avocado oil
Swerve Confectioners sweetener
Directions
Melt the chocolate chips and butter over low heat on the stove or microwave for 1-2 minutes and stir until completely smooth. Set aside.
Preheat oven to 350 degrees F.
Add the oil, eggs, yolk, vanilla extract, stevia and cream to a stand mixer and mix until combined.
Slowly pour in the melted chocolate while the mixer is on low speed.
Add the remaining ingredients and blend until combined.
Line an 8 by 8 pan with parchment paper or grease pan.
Pour half the batter in pan, then the peanut butter filling then remaining batter. Bake for 25 minutes. It might look underdone but it's best to take it out before it looks done to achieve that gooey texture.
Allow to cool 15 minutes before slicing.
What can I replace Peanut Butter with?
If you can't use peanut butter due to a peanut allergy or prefer to use another nut butter, that is totally fine. You can replace peanut butter with almond butter, sunflower seed butter or macadamia nut butter.

Brownie Batter
- 8 ounces sugar free chocolate chips Lily's Sweets brand
- ½ cup butter
- ½ cup avocado oil
- 2 eggs
- 1 yolk
- 2 teaspoons vanilla extract
- 1 teaspoon chocolate liquid Monk Fruit
- ¼ cup heavy cream
- ½ cup Better Than Sugar Confectioners sweetener or choice sweetener
- ¼ cup coconut flour
- 1 scoop Perfect Keto Peanut Butter collagen or 18 grams
- ¼ cup unsweetened cocoa powder
- 2 teaspoons instant coffee
- ½ teaspoon baking powder
- ¼ teaspoon salt
Peanut Butter Filling
- ¾ cup peanut butter no sugar added
- 2 tablespoon butter or avocado oil
- 2 tablespoon Swerve Confectioners sweetener or ½ teaspoon vanilla stevia
