How to Make Sugar Free Lime Cheesecake Jars
Ingredients
To make the crust for this simple dessert, you need coconut flour, Swerve Confectioners sweetener, vanilla extract, lime zest and softened or melted butter.
To make the filling you need, avocado, which provides that natural green color as well as fluffy texture, cream cheese, fresh key limes juice, lime zest, lemon liquid stevia or to taste, a pinch salt and heavy cream.
Directions
Mix the crust ingredients together in a bowl and use a fork to press together to form crumbs. Place some of the mixture to the bottom of 4 jars. Save a little for sprinkling over the top.
Add the avocado, cream cheese, lime juice, zest, sweetener and salt to a mixing bowl. Mix using a hand electric mixer or stand mixer until smooth.
In a clean bowl whisk the heavy cream until just below stiff peaks. Fold the cream through the cream cheese using a spatula and adjust sweetness to taste.
Evenly divide the cheesecake filling over the crumb in each jar. Top each with a sprinkle of crumb topping.
Add a little whipped cream and a little lime zest if desired.
Can I Make this Dairy Free?
Yes you could make these keto lime cheesecake cups dairy free by swapping the cream cheese for a vegan cream cheese of choice. For the heavy cream, I'd recommend using canned coconut milk.
Can I Change the Low Carb Sweetener Used?
Yes if you don't like the low carb sweetener I used in this recipe, feel free to change it to another low carb sweetener of choice.

Is there anything you could suggest I use if I do not have lemon liquid stevia? Hate to buy just for this. Maybe I’m just not creative enough in the kitchen to think of a substitute?
Brenda Bennett
