Who wouldn't want to wake up to the delicious cinnamon-y smell of already cooked oatmeal waiting for you in your kitchen?
Although I really do love my original Overnight Crock Pot Apple Oatmeal recipe, I decided to make it a bit more basic and versatile for you to get creative on your own. I eliminated the apples, honey and raisins to make it less calories, fewer points and sugar free.
It is still just as creamy and delicious as the original, but now you can have the basic version and can add in your own toppings and sugar free sweetener as opposed to the baked apples,raisins and honey.
Sugar-Free Overnight Crock Pot Oatmeal

Ingredients
- 2 cups milk (I used 1%, soy or almond is fine too)
- 1 c. rolled oats work best, but quick oats can be used as well.
- 1 tbsp. butter
- ½ tsp. cinnamon
- ¼ tsp. salt
- sugar-free sweetener of choice (I use Sweetleaf Stevia, [url href="https://iherb.com/p/11070?at=0&rcode=yaj035" target="_blank"]vanilla creme liquid[/url] drops)
- optional fruit toppings: raisins, strawberries, banana's
- Directions

- Spray the inside of a small 4 quart crock pot with nonstick cooking spray.
- Combine all ingredients, except sweetener, into the crock pot and cook on low overnight. For best results no more than 8 hours on low
- In the morning, give it a good stir and add sweetener of choice and optional fruit toppings. Enjoy!

All I have at the moment is Irish style oats, what would you recommend as far as additional liquid to alter the recipe to work with that?

I haven't used Irish oats, if they are like steel cut you should check my crock pot recipes using steel cut as the liquid is increased.

For those who don't do well with dairy. Would cooking with water instead of milk be okay? I also don't like my oatmeal sweet. In India we make it salty.

I was wondering why you need butter if you are spraying the crock pot? Also, is this considered 1 serving. I'll check my info but I thought my diabetic educator said 1/2cup is a serving. Thanks

You could eliminate butter without a problem, nutrition info is in the middle of the post and serving size is 1/2 cup.

Try coconut oil instead of butter. Very good and extremely healthy for you!
For diabetic diet the serving is one half cup. I use 1 packet stevia (one-half pkt would work if you don't add other liquid) in one cup plus milk. I like mine juicy with milk.. I eat oatmeal everyday so I just keep leftovers in the frig.

I was so exciting to come across your site by pure accident. I'm looking forward to working my way through. Even though i was found to be sugar intolerant over 2 years ago I still struggle with recipes and how to adapt them, so I can use them. I don't have anyone I can ask easily how, or ask silly questions of. My first silly question is if I use Stevia drops how many would your suggest for your overnight oatmeal recipe and could i use rice milk instead of almond (only because I have that)

You could use rice milk although I've never tried it. You should use the stevia drops after the oats are cooked. In your serving bowl try 1/2 a dropper full, stir, taste and decide if you need more.

Would this be something that could be frozen or would it not be any good? I just have a large crockpot and would be eating on this for a week if I tripled the recipe. Maybe I just need to buy a small crockpot. Any advice is appreciated. Thanks.

Well, I just checked my crockpot and it holds 4 quarts of water with space left at the top for probably 1 more quart. Does that mean it is about a 5 quart crockpot? It seems awfully big for just 2 cups of milk and 1 cup of oatmeal. I guess I could try it during the day when I could watch it and see how it does.

I have not frozen it like this, so I can't recommend it. My baked oatmeal recipe freezes fine, but its individual sized in cupcake liners.

I would add chopped fresh apple, a bit of oatbran for extra fiber and increased cholesterol busting power. I am partial to craisins in my oatmeal. Might try steel cut oats instead of rolled oats. Supposed, they are better for you. But sounds yum!

Put water in the crock pot. Place a micro wavable bowl in the water with all the ingredients & stir. Put lid on slow cooker & turn on. Heat on high setting for about 15 mins then turn down to low & leave over night. In the morning you will have perfect porridge
