Once the taco meat gets browned and you add the creamy simple ingredients, this delicious ground beef mixture gets spread into a casserole dish and baked for just 20 minutes.

It’s an easy meal prep recipe and the best part is that it can easily be frozen in individual servings for easy school lunches or work meals.

Can the ground beef be replaced?

Yes, if you don’t like ground beef, you can swap with ground turkey or ground pork if you prefer. Also, lean ground beef is fine. 

โ€‹Can I use a different cheese?

This Mexican ground beef casserole can be enjoyed with other cheeses besides cheddar.  You just want to make sure it will melt well.

These are the ones I would recommend; Monterey Jack, Colby Jack or Pepper Jack cheese or use a combination of them all. 

Can I make this dairy free?

To make this keto taco bake dairy free, you will need to replace lots of cheese, but it is doable. Replace the cream cheese with dairy free vegan cream cheese.

Replace the heavy cream with coconut milk. Replace the shredded cheddar cheese with dairy free shredded cheese like from the brands Daiya or Violife.

How to Store & Reheat

Once cooked and cooled, cover casserole with aluminum foil and refrigerate for up to 3 days or place in an airtight container and freeze for up to 3 months.

Reheat individual pieces in the microwave for 1-2 minutes or reheat the entire casserole by thawing the night before in the fridge, preheat oven to 350 degrees F and bake covered for about 30-40 minutes.

The Best Easy Low Carb Keto Taco Casserole Recipe

Ingredients

Optional toppings to serve

  • sour cream, avocado, salsa, cheddar, black olives, fresh cilantro, green onions

Instructions

  • Preheat oven to 400 degrees F. Grease a 9 by 13 baking dish with olive oil or avocado oil cooking spray. Set aside.
  • Add oil and ground beef to a large skillet and brown on medium-high heat.
  • Once done cooking ground beef and it's nicely browned, reduce heat to low and add chopped garlic and seasonings. Stir together then add in the cream cheese and salsa and continue to stir until cream cheese is well combined and no lumps. Spread this meat mixture evenly in the baking dish.
  • In a large bowl whisk eggs, heavy cream and 1 cup shredded cheese. Pour this over the meat mixture. Top with remaining cheese.
  • Cover and bake in preheated oven for 20 minutes. Remove cover and broil for 4-5 minutes until the cheese is nicely browned.
  • Enjoy immediately with optional favorite toppings.
  • Storage: Cover casserole with aluminum foil and refrigerate for up to 3 days or place in an airtight container and freeze for up to 3 months.

Notes

4 g net carbs per serving
To make 9 servings in the entire recipe, cut two long lines down the long side of the baking dish making 3 columns, turn the dish and cut two short lines to make 9 squares. Just like a tic tac toe!ย

  2. this definitely take longer than 20mins to cook, I’m cooking now at 25 mins and not even half way cooked still looks like soup

    1. Curious if you have a gas or electric oven? I preheat at 400 degrees, made as per my instructions at least a half dozen times and same cook time each time.

  3. I was looking for a similar recipe for an enchilada casserole but couldn’t find one. After I made this, and it was delicious, I decided tonight, I am going to make the “crust” first and bake it. Then put my enchilada topping on top, top with more shredded cheese, and bake until melted through. Wish me luck!

    I made your taco casserole and it was very good. I had to tweak it a little for my husband as his โ€œtasterโ€ seems diminishedโ€ฆsoโ€ฆtwo teaspoons of cumin, added fresh cilantro and used mostly pepper jack cheese. I had made homemade salsa that was too hot so this gave him extra flavor as well. All in all, it was a hit. Thank you for all you hard work and tasty recipes!

    Hi Brenda, Had to let you know that I made your Taco Casserole and it was great! I cut the recipe in half for just two of us. I put the jalapeรฑo only on half of the dish because wifey canโ€™t handle the heat, Itโ€™s going into our rotation of favorite easy keto dishes.

    We are taco fans in this house. I used to make a taco casserole loaded with tortilla chips pre my low carb/keto days. This recipe is simply amazing! Hubby calls it our new taste sensation. I used Brendaโ€™s Taco seasoning in place of the spices because I ALWAYS keep a batch of it on hand. Thanks for another great recipe Brenda!

    My husband and I made this for dinner about a week ago. It was delicious! I used an equivalent amount of my own sugar free, homemade taco seasoning that was already made rather than the individual seasonings since the ingredients were the same. It turned out very well. It’s nice to have something different to serve for dinner when we start to get in a rut with our meal ideas.

    1. I didnโ€™t drain. I used very lean ground sirloin. Will try that next time. Everyone liked it but it was more like a dip than an casserole

    2. You dont have the slightest idea of what a taco is.
      A taco is not a dish, it is a tool.
      You have a filet mignon? Put it a piece on a soft tortilla and becomes a Filet mignon taco. Do you have roast beef leftovers? Put them on a flat soft tortilla and it becomes a Roast beef taco!

      Anything can be a taco if you follow that simple rule!

      This vomit like casserole is not a taco! I cant see any soft flat tortilla!

    3. I haven’t made this yet, but I have found La Tortilla Factory zero net carb Tortillas at Walmart. They are pretty good, but have a slight sweet taste by themselves. Maybe some people can use these.

      This was very good! I ended up using ground chicken bcuz I didn’t have hamburger! I also didn’t have heavy whipping cream so used almond milk, also didn’t put cheese in the sauce as my granddaughter can’t have dairy so put cheese on top only one side. it was very good and will make this with ground beef next time!
