About a week ago my sister-in-law lost power in CT in the last snow storm.
SO happy she decided to spend the weekend with us! Not only bringing her wonderful self but the contents of her fridge as well! I was more than happy to receive!
About a pound of ground turkey was thawed and since I didn't have any to add to it of my own I made these turkey mini meatloaves. Obviously cooking for a family you will need to double this recipe, especially if you like to cook and freeze foods for a busy night.
With a family of 5 there were none left with the 10 muffins that were made from the pound. Since I know they freeze well having made them numerous times, I might even triple the recipe next time!
I love leftovers and I love to cook a meal one night, freeze it and be able to eat it another night when I'm super busy knowing it will taste just as good!
These are really low in calories and carbs as well. A perfect meal with a side salad and vegetable.
Turkey Meatloaf Muffins
Ingredients
- 1 pound ground turkey 93% lean
- 1 egg
- ¼ cup 1% milk
- 1 teaspoon Italian seasoning
- ¼ teaspoon pepper
- 1 teaspoon salt
- ¼ cup pork rind panko
- ¼ cup grated parmesan cheese
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl and mix well.
- Spray a muffin pan with cooking spray.
- Bake for 45 minutes!

I added a quarter cup of diced onion, softened, a tablespoon of minced garlic, and used pano instead of bread crumbs. I made 8 instead of 10, and when I punched it all in fitness pal and the calorie count was 114 each. They turned out real well. I will make these again.

Made these tonight and it was great. I can only eat very small portions so I am always looking for ideas that can be frozen for later. Also because my husband tends to not like the same foods I do so I have to be able to freeze for that reason as well.

I have made these many times already because they're easy and very delicious!!!!! Last time I had some quinoa in the fridge cooked up, and put that in instead of the breadcrumbs. I put in about 1 cup of quinoa, and loved the result. Kids didn't notice or taste the quinoa and I enjoyed how they weren't quite as dense as the original recipe. We could eat more without over-indulging on meat! I also often just make them into large or small meatballs and bake in a dish all together, because it saves me washing up all the muffin pans! I have also made them without the cheese and using rice milk, to make them dairy free - still delicious!!

When I've frozen mine, I make sure to thaw them overnight or at least 6-8 hours during the day for the night I plan to have them for dinner. I have re-baked them at 350 degrees for 10-15 minutes until warmed through. You could probably microwave but it may make them dry out a bit.

I make a similar version using a box of dressing. I love how easy it is to make these in muffin tins. Great to have on hand for those times I don't have a lot of time.
