Happy Wednesday! Last week I shared a new recipe rather than share my weekly food journal, but this week it's back to regular schedule! If you're new around here, I show you my eating for one day of my week and share it on Wednesday. Often I remember what day it was that I'm sharing but since I skipped a week, I can't recall what day this was, LOL! Anyway, I'm not perfect, but I'm honest. I share, good or bad, so no judgment please and thank you!
Breakfast was one of my newer recipes, a Nut Free Gluten Free Granola and it rocks! I just enjoyed it with almond milk but also love it over yogurt! The recipe makes a huge amount too so plenty for days even with my family of five eating it too. The hubby prefers it with nuts, but my boys are allergic so I need to make a special one for hubby. 🙂
Felt like something simple for lunch. Fresh spinach with lots of fresh veggies. For dressing I usually use apple cider vinegar and some extra virgin olive oil. Sometimes the simplest recipes are just the best.
Yep! A Trader Joe trip in the afternoon. Of course I couldn't help myself, I do love salty chips but these were pretty healthy for a chip or as healthy as can be anyway. Made of lentils and tasted great! A bit spicy with the black pepper so don't start eating them in the car unless you have a drink with you! Lesson learned LOL!
I had some left overs from another of my new recipes, BBQ Chicken Cheddar Burritos with Mayo Free Slaw. This uses left over cooked chicken with my Homemade Barbecue Sauce. Then I added some crispy mayo free coleslaw, easy dinner and everyone loved it. The kids of course didn't want the coleslaw in theirs (they have no idea what they are missing!)
Yes, yes it is another new recipe. Sometimes I do 3 a day, sometimes none. Just depends when I'm on a roll I go with it! These were made awhile go and I had some left over in the freezer, Orange Banana Hidden Veggie Smoothie Popsicles. I HID them or my kids would have eaten them all on me! No lie! They have no idea there's a veggie hidden in them, (insert sneaky laugh!!!)
