I can’t start my day without coffee and I just love my soy creamer from Trader Joe’s. I really used to be highly addicted to the flavored sugar free creamers. One day my hubby said, ” how about a little coffee in that cup of cream!” I was overdosing on it for sure! So I tried making my own and tried coconut milk creamers too but this is the one I continue to come back to because it doesn’t upset my stomach. I don’t add any sweetener and like it fine without. 🙂
I have a ton of Quinoa Recipes but never had it for breakfast before. Since I had a bunch of it cooked up for the recipe below I was making, it was easy enough to make a quick breakfast. I added a diced pear, some Greek yogurt and cinnamon and called it breakfast. And.it.was.good.
Unfortunately it didn’t keep me full and I was quite starving by lunch. Also my monthly cycle was due any day and I’m always more hungry right before. So this day became a HIGHer calorie day than I usually have, but as long as it only happens a few days a month my weight is still maintainable.
Lunch was a simple salad with celery, chicken, cherry tomatoes, carrots, romaine and extra virgin olive oil and balsamic vinegar, YUM!
But I was still hungry so………
I love cauliflower! I prefer Roasted Cauliflower with lemon tahini dip but I only had a bag of frozen , no fresh, so I ate this whole entire bowl after my salad for lunch. Quite filling!
Over the summer I received some watermelon stevia from Sweetleaf to try and used it for my Watermelon Lime Spritzer recipe and still had plenty left in that little bottle. One day I just decided to try a few drops with my regular seltzer and lOVED it!
Had to try my new recipe as an afternoon snack! Cocoa Baked Quinoa Bars! I added some sunflower seeds and chocolate chips but you can add whatever you like on top. Really yummy and high Fiber too so I was content until dinner!
On the menu for dinner last week was a roasted chicken (took my skin off) and roasted carrots and potatoes. Also had some Brussels Sprouts with turkey bacon but my family ate that up before I could get some! So I had some mixed veggies with beans. I always have frozen veggies on hand to throw into any meal, love frozen!
Do you have a day once a week where you eat a lot more calories than on most typical days?
Rather than cheat days I just like to call them HIGH Calorie days!
What role, if any, does your monthly cycle play, in your weight loss goals or in maintaining your weight?
My weekends always have me eating more calories! I actually eat just as clean and healthy on the weekends, but I’m not as busy and have access to more food so… I JUST EAT 🙂

i don’t count calories so i don’t know haha.
i have finally realized that if i just listen to my body i will be ok. yes some days i notice i am more hungry and eat more, but i know i have other days where i am not as hungry and eat less. it all balances out and i trust my body to do the work for me. it doesn’t know what a calorie is, so why should i care about them? i just make sure to eat real foods and have balanced meals. it all works out in the end.
those cocoa baked quinoa bars look tasty! i never thought to make bars out of quinoa. good idea!

Breakfast quinoa, especially what you made, is my favorite way to eat quinoa.
If I have to tighten the belt, I usually mooch off family members for dinners at their house. 🙂 While they eat totally different things, they usually have something I can eat like chicken that I can add to salad at the very least. Or I eat eggs. Haha. I still eat well and do okay with maintaining.
