A healthier sugar cookie, is it possible and does it taste good?
It is possible and these are FANTASTIC! Made with healthier sucanat, which is evaporated cane juice that's been dried and is full of vitamin and minerals. You can have a deliciously soft texture of a sugar cookie you may be familiar with. {Another good option is to use coconut sugar or honey.}
Of course it is slightly on the tan side and not as "white" as the others but you can feel good about making these any time for your family, not just for the holidays. And if you decide to add some frosting on top for the kids, who cares if they are a little tan right?

Whole Wheat Refined Sugar Free Sugar Cookies
Ingredients
- 2 sticks butter softened
- 1 ½ cups sucanat
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 2 ½ cups whole wheat pastry flour
Instructions
- Preheat oven to 350 degrees.
- In a stand mixer combine butter, sucanat, baking soda, and salt.
- Beat on medium speed for 3 minutes.
- Beat in eggs and vanilla until well blended.
- Reduce mixer speed to low and gradually add flour.
- Using a tablespoon, roll into balls and bake 10 minutes on a parchment lined baking sheet.
- To make cut out shapes spread dough between two pieces of plastic wrap, roll to ¼ inch thickness and use cookie cutters to shape.
- Bake on parchment lined baking sheet for 10 minutes.
- Using half of this dough makes 18-20 cookies.

Hi you mentioned that there is not an aftertaste. Every time I have baked with Stevia there is a bitter aftertaste. Any thoughts would be appreciated. Thanks!

I find using the Sweetleaf brand does not produce an aftertaste, especially when I used a flavored liquid. Which brands have you tried?
