Crock Pot Beef Stew

- 2 pounds beef chuck chunks
- 2 tablespoons oil
- 1 teaspoon garlic
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups beef broth
- 2 cups diced carrots
- 1 cup chopped onion
- 4 cups chopped potatoes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon allspice
- 1/4 teaspoon dried basil
- 1/2 cup frozen peas
- 1 tablespoon fresh chopped parsley
Heat oil and garlic in a large saute pan add meat once garlic is fragrant.
Brown meat and season with salt and pepper.
Add meat and all other ingredients except the peas to the crock pot.
Cook on high for 7 1/2 hours then add peas and cook another 30 minutes.
Top with fresh parsley to serve.
