Preheat oven to 350 degrees F. Chop chicken and set aside.
In a large bowl mix the cottage cheese, eggs, Italian seasoning and Parmesan cheese together. Set aside.
Spread 1/2 cup Alfredo sauce into the bottom of a 9 by 13 baking dish.
Place 2 egg white wraps over the sauce in the baking dish, not overlapping. Cut the third egg white wrap in half and lay to cover bottom of the dish.
Spread half the chicken over the egg whites wraps.
Spread half of the cottage cheese mixture over the chicken.
Sprinkle 1/2 cup shredded mozzarella over the chicken.
Pour and spread another 1/2 cup Alfredo sauce over the chicken. Lay 2 whole egg white wraps and another cut in half. Add remaining chicken over the wraps.
Spread remaining cottage cheese mixture over chicken. Top with another 1/2 cup mozzarella cheese. Top this with the last 3 egg white wraps and cover them with remaining Alfredo sauce. You could sprinkle extra mozzarella over the top of this if you desire.
Cover and bake 20 minutes then uncover and bake until browned or broil for 3-5 minutes.
