Low Carb Creamy Lemony Faux Risotto

- 3 tbsp olive oil
- 1 cup chopped shallots
- 1 clove garlic minced
- 8 cups cauliflower florets
- 1 teaspoon salt
- 1/2 tsp pepper
- 1 cup vegetable broth low sodium
- 1 lemon zested and juice about 3 tbsp
- 8 ounces mascarpone cheese
- 1 cup grated Parmesan reggiano
- 1/4 cup fresh chopped basil
Heat oil, shallots and garlic in a large skillet until shallots are tender.
Place cauliflower florets in food processor and pulse until resembles rice.
Add cauliflower rice to skillet and season with slat and pepper.
Pour in broth and bring to a boil.
Cook about 5 minutes then turn heat to low.
Stir in lemon juice, zest and mascarpone cheese.
Once mascarpone is incorporated add Parmesan and basil.
Enjoy immediately.
