Low Carb Keto Cottage Cheese Strawberry Mousse

- 1 cup cottage cheese
- 1 cup strawberries or 128 grams
- 1/4 cup heavy cream
- 3 tbsp collagen peptides (20 grams)
- 1 teaspoon gelatin
- 3 tbsp water
Add cottage cheese and strawberries to a high powered blender or food processor, blend until smooth.
Add gelatin powder and water in a small bowl and heat until dissolved. Set aside.
Add heavy cream, collagen and optional ingredients to the blender and blend until smooth. Taste and adjust sweetener.
Drizzle in gelatin and blend once more until incorporated.
Pour into 4 serving glasses and refrigerate for at least 1 hour or more.
