Low Carb Turnips Au Gratin

Ingredients

  • 2.25 pounds turnips (about 6 medium)
  • 1.5 cups heavy cream
  • 2 cloves garlic minced
  • 2 tablespoons butter melted
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh thyme divided
  • 2.5 cups shredded mozzarella cheese divided

Instructions

  • Preheat oven to 350 degrees F. Grease a 9 by 9 baking casserole dish or 1.5 quart dish with olive oil cooking spray or avocado oil cooking spray.
  • Peel the turnips with a vegetable peeler and thinly slice about an 1/8th of an inch with a sharp knife or use a mandolin slicer.
  • In a small bowl, whisk together the cream, garlic, melted butter, salt and pepper and 1 tablespoon of fresh thyme.
  • Layer one third of the turnip slices in a single layer on the bottom of the baking dish. Pour one third of the creamy sauce mixture over the turnip layers. Sprinkle a half cup of mozzarella cheese over that. Repeat this process for the second and third layers of creamy cheese sauce and remaining turnips. You will have 1 cup of mozzarella remaining. Set it aside.
  • Cover with aluminum foil and bake for 1 hour and 15 minutes or until turnips are soft when you insert with a knife or fork. Remove cover, sprinkle remaining mozzarella cheese over the top and bake 10-15 minutes until cheese is melted and bubbling and the edges of the baking dish are golden brown. Serve with remaining tablespoon of fresh thyme or additional optional ingredients, fresh chopped parsley or chopped green onions if desired. 
  • Storage: Store any leftovers in an airtight container in the fridge for up to 5 days.
