Ingredients

chopped packed raw kale
stems removed

scallions
chopped
2
pears with skin
chopped
1/2

chopped walnuts
1/2

crumbled blue cheese
light
optional: Garlic Parmesan Gluten Free Croutons
1/2 cup dried cranberries, fruit juice sweetened (found at Whole foods)
Dressing
1/4
cup
extra virgin olive oil
1/4
cup
lemon juice
1/2
teaspoon
salt

tablespoon
Dijon or regular mustard
pepper to taste
Instructions
In a large bowl toss together all ingredients.
In a small bowl whisk dressing ingredients and combine with kale and fruit.
Top with croutons if desired!
