Scrambled Egg Chocolate Pudding (Sugar Free, Keto, Low Carb)

Pudding

  • Place your scrambled eggs into a high powered blender with the rest of the ingredients. Blend until completely smooth in texture. Taste and adjust your sweetener if needed.
  • Pour batter evenly into 4 serving glasses and refrigerate until set, about an hour.
  • Store in the fridge covered, for up to 4 days.

Ice Cream

  • You can make this into ice cream! Pour pudding into your ice cream machine and follow manufacturer's instructions. Enjoy immediately!
  • For the Ninja Creami, add to the freezer container and freeze for 23 hours. Place into canister, lock and press ice cream button. I did this twice, then pressed Re-spin. It was thick and creamy!
