Slow Cooker Tahini Chicken Thighs
- 8 boneless, skinless chicken thighs about 1.5 lbs
- 1/4 cup tahini
- 3 tbsp extra virgin olive oil divided
- 3 tbsp water
- 2 tsp lemon zest
- 2 tbsp lemon juice
- 2 cloves garlic minced
- 1 shallot grated
- 1/2 tsp salt
Pour 1 tablespoon of oil into the slow cooker then lay the chicken thighs in. Sprinkle with salt and pepper.
Whisk the tahini, the remaining oil and remaining ingredients together and pour over the chicken thighs.
Cook on high 4 hours or low 8 hours.
Sprinkle with fresh chopped parsley if desired.
