Instructions
Put the butter in a 6-inch cast-iron skillet and place the skillet in the oven on the middle rack. Preheat the oven to 400°F.
Put the remaining ingredients in a blender and blend until combined. Once the oven is hot, swirl the melted butter all around the skillet. Pour the batter into the skillet and return the pan to the oven.
Bake for 15 minutes, or until puffed around the edges and still slightly jiggly in the center.
If desired, top with a dusting of confectioners’-style sweetener, a drizzle of sugar-free maple syrup, and/or a handful of chopped apple. Best served fresh.
